Riaaaaaaaaa! Omg this recipe is d best! I was sceptical about having "no yeast" but it came out exactly like I wished it would. I tripled it cuz one would not be enough. Also I did not peel of the dark skin of the coconut meat as this is how we traditionally do it in tnt... we grate the whole thing and dump the whole thing in. Ended up using less liquid because of this. Hope it holds up well the day after. Thank u so much for the measurements... perfect coconut bake. Thank you.

Do you use a measuring cup for the flour or a regular cup because my bake dough was small and would not hold together seems to richI followed the instructions exactly maybe needs more flour ,I did something wrong.
Hi Ria, nice recipe. I like the coconut bakes that dont have yeast because I prefer the more dense crumb that is similar to a biscuit rather than a fluffy loaf of bread as I've seen in other recipes. To achieve this, would you reccomend adding perhaps a teaspoon or so of baking soda? Your advice would be greatly appreciated. Thanks!!!

Did you use two different types of sugar? Because I’m very sure it’s yeast I saw at 1:56/ 1:57 minutes . Correct me if I’m wrong... unless your salt is tanned.

Natasha Charles Below is the printed recipe as well. 1. Note it’s tablespoon of baking powder, not teaspoon (make sure you have good/fresh baking powder as well) 2. Measure the coconut exactly because too much will affect the texture and it will break apart after cooking. Also make sure it’s finely grated. Are you using fresh or frozen store bought coconut ? 3. If it’s raw inside, that means it needed more cooking or you didn’t put or measure enough baking powder. 4. You have to take it out of the oven when it’s a nice golden brown and sounds hollow. If it darkens too quickly and still uncooked at the temp stated, your oven may be off. Lower the heat. Let me know if you have any more issues. Why sugar? Looks delicious but try to omit the sugar.its so unnecessary. It takes nothing away because of the rich coconut flavor but it can sadly contribute to diabetes .

I make this bake in a covered iron pot on the stovetop on a low heat not in the oven. The traditional ones were done with fire on top and fire below.

It may be better to just blend the coconut so I can get both the milk & the flakes.
liaciaria if you blend the coconut with water you remove the flavor from the coconut-my opinion.
