Actually my father cooks mutton in my home for my daughter and for himself..But he is out of station and my daughter said and I quote it "Dadu agar hote to mein mutton khati,aapko to bnana nahi aata" now being a father I had to do something,so I found my refuge at the one and only Mr Ranveer Brar..I followed this recipe of and it came out super..So all thanks to you Sir..The description of a dish is so real,you put things in such a simple way that even a person who is below average cooking,made an awesome mutton curry.. Was super delicious. Omg. For the pressure cooking phase I cooked in a pressure cooker for 30 mins (checking half way through and adding more water as required. The black cardamoms are quite strong so I used half the qty.
Noted 2 things today 1- shade card concept 2- dry masala ( one added in the end), was fried in ghee before adding to the finished product, l am sure this will change the way we cook, thanks Ranveer
heating the masala is always important, as that releases the essential oils and flavours, and roasting masala in ghee or oil, helps retain the aromas better as the ghee/fat/oil is a carrier medium, and keeps the smell with it. bringing more zaika!

Indeed we are diverse, I’m a south indian, and we don’t use a lot of black cardamom or even mace in our gravies, but ever since I’ve begun using these spices, I’m hooked. Be careful when adding salt to the mutton, as the masala has salt it it. add enough for just the mutton to absorb, then adjust according to the gravy later after cooker is open

While roasting the masala, he gives salt in it. Do we remove the salt after roasting and before grinding the spices?

But you missed that:
Lamb - a few months
Hogget - 1 to 2 years
Mutton - older than that.

Be careful when adding salt to the mutton, as the masala has salt it it. add enough for just the mutton to absorb, then adjust according to the gravy later after cooker is open
Every time I try one of your recipes, I learn something new, like the history of our cuisine or tips like tomatoes do not go in mutton curry,etc. My son is a great fan of yours and every time I'm travelling, he follows your recipes to cook. I wish I could share the picture of the dish I made.
