Easy MINI MEATLOAFS for 2 to 4 w/ Oven Roasted Carrots!

Meatloaf Ingredients:
16 oz Ground Beef (85/15%)
1 Whole Egg
2 slices bread (white or wheat)
1 Tab. Water
1 Tab. Low-Sodium Soy Sauce
Salt & Pepper (to taste) - Note: error in video, 1/4 tsp, NOT 1 tsp.
1/4 cup Diced Onion (optional)
Meatloaf SAUCE Ingredients:
1 Tab. Ketchup
1 Tab. Low-Sodium Soy Sauce
1/8 tsp. Ground Garlic Powder
Roasted Carrots Ingredients:
Whole Carrots (3)
Olive Oil (drizzle)
Coarse Salt (to taste)
Fresh Ground Pepper (to taste)
Other Items:
Foil
Non-Stick Spray
Baking pans with sides
