Kevin, you forgot to install the seus pgti shaders that this pack was made for. Putting them on will make a huge difference, including actually making studs and such 3d and improving overall quality by a ton

Hey Kevin! Your build actually looks absolutely lovely with the texture pack on! Ignore how it looked in vanilla textures, because you weren't building with those in mind. You clearly have a great eye for colors and I am seeing a lot of builder potential. I'd really love to see you play in creative mode and actually just build, even if it's on stream. Back to your build: for the blank spaces, like at the end of the hall, it's good to remember that blocks are often placed oriented, not only based on what direction you're facing, but also on where you are clicking to place the block. For example, you could turn the stairs upside down to make a small table and put a clay pot with a flower in it on top. Remember that orientation of a block looks at whether you are clicking on the left, right, top, or bottom of a block and whether you are above or beneath the block you're placing. The house looks like a modern Nordic bungalow, I actually love it. The before and after was hilarious, looks like a council flat in north London built by the Irish in the 70’s 😂

Polished Granite is actually really nice. But unpolished Granite is indeed unpleasant for houses. However the rest of the blocks/materials are completely unacceptable.

6:55 It's randomized texture orientation, like with grass in vanilla minecraft. That texture will always have that orientation at those coordinates.
