New home baristas are so lucky to have resources like this to learn from. 10 years ago alot of the myths Lance busts in this video were prevalent on the forums and UA-cam. Coffee knowledge has come so far since then and Lance is great at its communication.

This was fantastic. I love how you just did the bare minimums, what most of us started when we first got into espresso. No WDT, no sifting, just tapping, tamp, measure and go. This would make a great series!! Dialing in random coffees
Another important thing: when dialing in a lot of shots, don’t be afraid to spit them out. You can accidentally have way to much caffeine really fast if you don’t.
Appreciate you including the bit about using different ratios for different roasts! I had a light roast that I really wasn't enjoying, and a 1:2.5 extraction was a complete game changer!
This is a great video for people who are hung up on the 1:2 in 25-30s. I learned that guide and thought it was a rule for the longest time, but experimenting around that has brought me much better espresso. Nice video man!

Nailed it, Lance. This is definitely the skill new baristas struggle with the most (although the focus the most on Latte Art). I think you did a great job walking them through the mindset.
Note that one some machines, like my Breville Bambino, the amount of time from when the button is pressed and the extraction begins can vary by a few seconds because the machine is more or less warmed up. Don't forget to do the group head purge, and running a little hot water out the steam wand just before hitting the button ensures consistency!

New for me was: the drips start after 5 (didn’t know there was a predictable time for that) and that you use contact time as a mediator of taste, but ratio as a mediator of texture, sounds like a very useful rule of thumb. That said I am usually pulling 1:2, and usually using only light roasts, but yeah I go for the intensity.

I was suuuper struggling with my shots and it was driving me crazy, I was blaming my machine and then blaming my grinder. I even have replacement gear on the way, but in a fit of desperation I watched this video and you showed me exactly what I was doing wrong, and now I can pull a tasty shot every time... no lie. And I had the audacity to tell my wife "I fixed my espresso problem!" That wasn't me, that was Lance up in this kitchen.
This video is just what I needed! I always buy different origin light roasted coffee, so every single one requires for me to adjust my J-Max grind size to hit that 35-40 second mark for the Flair Pro 2. I'll get to the precise grind size faster with this analysis and pull great shots with less trial and error (I always taste the shots so I wasn't too far off lol). Great video, Lance, as always 😎
I've been going the distance, ranging from light to dark roasts. I have found that I sometimes need to go longer on a shot to get a sweeter taste, especially with lighter roasts. You've just confirmed everything for me. Thank you.
Not done the video yet, but I'll say right now this is the best Lance video I've seen to date - and I've watched a lot of them. The secret ingredient in this one? Pauses. A lot more pauses. Generally a more relaxed speaking tone and cadence, with natural breaks. Lance, if you're reading, it makes a HUGE difference in the end product. The cinematography and editing is also good of course, but it usually is.
I predominantly use a Brazilian dark blend for my morning espresso. The ratio’s you gave for medium and light roasts are very helpful and I’ll be sure to give them a try. Cheers man.

Excellent and entertaining. I've always timed my shots from when the coffee hits the cup. As a result over extracting, also been doing a 1:2 ratio for medium roasts, so maybe under extracting there. Will now recalibrate with this new info! 🙏🙏🙏
When I was in the army (artillery) as a forward observer we sometimes had to hit the target within a couple of test-shots (all manually, map, compass, eyeballing ... but no GPS tools). The goal was to enclose the target (left - right, forward back) with subsequent shots each coming closer to the target until the target was within the default spread.... (ideally only with 1 test-shot) Anyways... remarkably similar to what you did with those beans 🙂
My barista espresso machine came yesterday- took me 14 tries. The beans I was using needed fine grind. The 15 try came out really good; the pressure meter stayed a little below the middle. Tasted ok with cream. A friend was telling me, after extraction add cream under 45 seconds to keep bitterness from coming.

Great method of explanation, I would say. Forget the rules in the beginning -- adhere to the principles, just feel free to experiment, keeping the guidelines in mind. First of all principles is the taste, remember this... Thank you so much for this insight!
Perfect timing for me! I'm about to head to my parents for a few days for Christmas, and I plan to try and break them out of using a supermarket italian roast in a pressurised filter. Their machine and grinder can 100% get good espresso, but they haven't found a coffee that both suits their taste and they can get fresh enough to work for them. I've found some double roasted coffee to try, so this is perfect for me. It's well explained and easily understandable, and the small tips that aren't the most obvious help a lot.
Sing's I can go the distance and has one of the best teaching methods for espresso? Instant sub. Your videos are amazing, they treat me like I'm 5 and know nothing (one is true) and your method of relaying information is amazing. I look forward to watching more of your videos. Thanks Lance!
If you are using a lighter roast, and want to target a 3:1 ratio, is the 25-30 second shot still recommended? Or if you have a larger shot, should you aim for a slower shot as well, ex. 40 sec?

If you have temp control it made a huge difference for my light and dark roast shots. Its an easy variable to taste big differences.

Excellent and entertaining. I've always timed my shots from when the coffee hits the cup. As a result over extracting, also been doing a 1:2 ratio for medium roasts, so maybe under extracting there. Will now recalibrate with this new info! 🙏🙏🙏
When I was in the army (artillery) as a forward observer we sometimes had to hit the target within a couple of test-shots (all manually, map, compass, eyeballing ... but no GPS tools). The goal was to enclose the target (left - right, forward back) with subsequent shots each coming closer to the target until the target was within the default spread.... (ideally only with 1 test-shot) Anyways... remarkably similar to what you did with those beans 🙂
My barista espresso machine came yesterday- took me 14 tries. The beans I was using needed fine grind.
The 15 try came out really good; the pressure meter stayed a little below the middle. Tasted ok with cream.
A friend was telling me, after extraction add cream under 45 seconds to keep bitterness from coming.

Great method of explanation, I would say. Forget the rules in the beginning -- adhere to the principles, just feel free to experiment, keeping the guidelines in mind. First of all principles is the taste, remember this...

Perfect timing for me! I'm about to head to my parents for a few days for Christmas, and I plan to try and break them out of using a supermarket italian roast in a pressurised filter. Their machine and grinder can 100% get good espresso, but they haven't found a coffee that both suits their taste and they can get fresh enough to work for them. I've found some double roasted coffee to try, so this is perfect for me. It's well explained and easily understandable, and the small tips that aren't the most obvious help a lot.
Really cool approach to help us understand the dialling in process.

If you are using a lighter roast, and want to target a 3:1 ratio, is the 25-30 second shot still recommended? Or if you have a larger shot, should you aim for a slower shot as well, ex. 40 sec?
