Elderberries: make your own medicinal syrup (with recipe)

  • Elderberry Medicinal Syrup Recipe:
    1 1/2 quarts fresh elderberries
    2/3 cup sugar
    1/3 cup water
    1 Tblsp ground ginger
    1-2 tsp ground cinnamon
    1/4-1/2 tsp ground nutmeg
    Heat in pot/pan while stirring frequently. Simmer on medium heat until slightly thickened (15-20 minutes). Strain if desired, and store in glass jar (or other container) in fridge. Stores 3-6 months.

    I just planted a few this Spring. They are still small. I’m hoping they will make it to next year and make gains then. Flowers and berries, sounds like a win win to me!

      It's so interesting how we can get along just fine with just a cursory knowledge of a certain thing...until it comes down to doing it for ourselves, then there are so many questions. It was fun to finally get some of those questions answered.

    Very cool, our elderberries are also starting to be ready to pick. One trick to separate the berries from their stems is to freeze them in a bag, then shake the bag once frozen. We also don't eat them raw :)

    Thx for sharing Trent. I’ve not tasted or seen elderberries so found very interesting. It looked delicious 🤤. Check if your peach is a grafted tree. If so the new shoots may be the stock shooting below the graft. Just crossed my mind 😊. God bless you all from Australia 🇦🇺 and enjoy your elderberry syrup. On ice cream would be yummy 😋 😊.       Good point, that tree may be grafted...in which case who knows what kind of peach I'll get. Either way it'll be a nice shade tree, and someday we may even find good fruit! :)

    Freezing them really does make it super easy to remove the berries. Here's how I do it: freeze the entire clusters, then use a wide-tooth comb to pull the stems through or swiftly rap the cluster, holding the stem firmly, against the side of the bowl. The berries fall right off! Bring on the elderberry cordial, elderberry pancake syrup, home-made elderberry kambucha, and elderberry ketchup!

      I second the freezing, but I just shake the freezer bag around and then pick the stems and green berries out afterward.

    I’ve been making elderberry tinture for a couple of years, my family swears by it ( I’m not a big fan) Last year I made Oxymel … OMG!!! It’s delicious!!!!! The trick to taking them off the stems is a deep bowl and a good movie

    I remember one year as a kid there was a bumper crop of wild black elderberries. Mom had us pick them and she made a large batch of pies and many jars of jam and seedless jelly from them. Mom and 7 kids, none of us got sick. We had so many that I experimented using the juice an ink, which was only marginally successful. Properly fixed it might work as a dye though. Not sure whether to try white vinegar or alum for that, probably varies by cloth fiber.

      Thanks for sharing your awesome experiences with it! I had thought the same thing with the elderberry juice, that it could be used as a dye...fascinating how it turns from red to blue when "thinned" with water.

    I've only made elderberry syrup from bought organic dehydrated berries. I'm sure yours was much better. They are so pretty while hanging in their clusters.

    Next time use a fork to remove the fruit. The berries don't fit through the fork tines and they just pop off. Like combing hair only it's berries. lol We made pies mostly when I was younger, now it's the medicinal syrup mostly. Remember not to eat the unripe berries, they are poisonous. So nice to see you all again ❤.

      Yeah, my understanding is that the unripe berries have the same poisonous compounds that are in potato leaves (and green potatoes). Makes sense.

    I heard that it's specifically the seeds that are toxic if you have a lot, and it's cyanide. This is also why the recipes(at least the ones I've seen) strain the seeds. Unlike when you buy strawberry or raspberry jam from the market.

    Adequate rain is biggest factor. 1½ qts is a LOT of time for me. My chickens annihilate them.

      The rain has been essentially non-existent for us this year until 2 weeks ago...but we did water them (but we did that in past years as well). The only huge difference we know of is that the grass is under control. But who knows. Anyway, we're grateful for this harvest this year. :)
