It's important to use leftover rice and not fresh cooked rice. I used 1 day old cooked rice and it was perfect. I used dosa rice for soaking. Fermented it for close to 13 hrs. The dosa was DELICIOUS and not sour at all but had holes all over.
Grind the batter in the afternoon at around 2pm and pour it in a big vessel and then it will ferment next day morning ready to prepare dosas. I tried its yummy
Please recreate this video once again and show properly the measurements slowly and mention which rice etc and if urad daal Or yeast is to be added. So many queries... Would request you to reshoot this preparation as it looks very good
But unless you add 1/2 teaspoon yeast this will never ferment .. overnight..Please be truthful when you present a Recipe.....because People are Living Gods ..not Stones..🙏

The north Andhras know similar dish . They use beaten rice and soaked normal rice in equal quantiles .This mixture will be ground in to a paste after adding curd to it . They soak the same over night . Next morning you can fry in the same way with very little oil and by putting cover at low flame . We have to use curd-coco nut chutney along with this There are commonalities of dishes in Tulu / Konkan areas with north Andhra areas as it appears these were migrated from same place at the same time one going towards north Andhra and other to wards above Similarly obbaattu ( they call Purabi pul or bobbattu ) , special type of idly made with covering of green leaves of Jack fruit tree , one sweet called otta boda etc . These are available in both areas Origins of these settlers.can be found from some of these some of Special dishes

I too noticed the comments, however I thought if I slow the playback speed, perhaps, I can, note down the exact amount of ingredients used. Unfortunately, failed . As the person involved with this recipe has not mentioned the amount in weight or volume about the raw rice, neither the amount of salt needed to be added. E.g. Tablespoon or Teaspoon.

In Mangalore people never flip any dosa traditionally...it's only after coming to Bangalore,I came to know that....n we actually don't oil after making dosa...we just wipe the tawa with oily cloth n pour batter.....

It depends on weather conditions... In India it ferments overnight
I dont add yeast. it ferments overnight. I add dal, poha and coconut
