Matcha Tiramisu (for 4 people)
Sponge cake for Tiramisu
3 egg yolks
3 egg whites
90 g (1/2 cup) caster sugar
90 g (3/4 cup) all-purpose flour
powdered sugar
Matcha Syrup
18 g (3 tbsp) matcha powder
70 g (1/3 cup) sugar
100 ml (1/3 cup + 1 tbsp) water
Tiramisu Cream
300 g Mascarpone cheese
3 egg yolks
3 egg whites
45 g (3.5 tbsp) caster sugar (for egg white)
45 g (3.5 tbsp) caster sugar (for egg yolk)
Matcha powder for decoration

Indy, is this similar to Maccha’s cheesecake located in Kyoto, Japan? I was so obsessed with it when I visited Japan, it didn’t have any sponge cake at all. Also, their warabimochi texture in their pairfait is so unique that I’ve never experienced in any other dessert restaurants in Kyoto. That chewy but with a body and not like just mochi chewy consistency which other places offered. I’ve never seen videos recreating that yet.
I've tried so many matcha sweets in Kyoto but I don't think I've tried the one you mention. So I'm not sure if it's similar to it, and my Tiramisu doesn't contain warabimochi. I hope you enjoy my video:)

Hi, since the egg is not cooked, can we taste the raw egg or not ? Cause im pretty sensitive to smell, thank you
Way too much sugar...
Then you can reduce the amount of sugar in the syrup or the sugar for the egg yolk in the cream😉 However, do not reduce the sugar in the sponge cake, it might be less fluffy.
