    I notice you always throw meat, in this case ribs directly over super hot oil/water & catch them in your laddle/scoop. Do you ever miss & cook yourself? 🤣🤣🤣🤣

    To help with the confusion, that was not any liquid after rock sugar, that was the rock sugar turned light brown, then put in the ribs.

    Just one thing, when you blanch the ribs, make sure you add the ribs to the wok when the water is still cold, that’s what drives the blood and gunk out of the meat, in Chinese I believe that step is call 焯水

    you should tell them to boil the ribs to tender. or boil then reduce after you stir with caramel. otherwise the ribs will be tough
