Depending on ur boss's budget there are a variaty of machines. You can opt for Black Eagle White Eagle La marzocco linear pb La marzocco Strada Simonelli Rocket REA But they must be 2 group head. You can research about them and choose what might be perfect cause all those are nice machines
At a highest percentage u have to do that but much more focus on the kinds of machines your to use and also visual & tasting the coffee you have met at the interview bar
Depending on the brand you have encountered, I believe if you get a LaMarzocco, white Eagle, black eagle or Simonelli will work for commercial especially if its a double or triple group head

Well as a barista myself!!a good coffee dose should be from the range of 18 to 20 ..believe me if your dose is 15 it’s not going to be perfect one. I’m not teaching you your job ,but as a teacher he could’ve easily used ‘barista mood’ to adjust the range of his dose 15 isn’t the perfect one my opinion though..

When I make videos basically I target everyone especially the junior baristas from which basics I give them the master the basics and after creating their own recipes. And remember that depending on the type of Coffee ur handling is where u create a special recipe that u will enjoy. There coffe which u will even like at 14gms or 21gms.
