What about temperature? Thats a critical variable for extraction where you need 94 to 96 Degrees C for lighter roast and between 88 and 90 for dark roasts and about 91 to 93 for median dark roast. Thats La Marzocca has temperature control wheel on the side for this.
That's not true, every machine has a different temperature on the display and in the actual group head. There is no such thing as a fixed temp range for light to dark roast, you just have to adjust during the dial in process.
It depends on the grinder! If its a normal espresso grinder, yes you'll need to purge to get the right even grind size. If you have a single dose grinder, then you don't need to purge the grinder!

I find that you are very messy, you should use a funnel on your portafilter for better WDT,the way you distribute and tamp The worst i have seen on UA-cam, presentation is ok And you never talked about temperature setting
