Here's a game you missed, called Shaolin Lord of the Fist or Shaolin depending on the region for the PS1 and it directly uses Jackie Chan's hallway of Wooden Men as a level late in its game. You even unlock the Wooden Man (and colours) and they are used in 8v8 mode.
