Yep, all is great on my end. I'm spending more time with family nowadays, but still making videos when I get the urge. LOL I appreciate you checking up on me and thanks so much for the support! Cheers!!!!!
I have a vortex cone. Great for chicken. I like to put a chunk of apple wood for extra flavor. Also, I believe that closer to the dome is hotter since the vortex shoots the heat straight up and it flows down the sides of the cooker.
Man, i cant express how nice it is to see you uploading regularly again. Warms the soul. I know you took a break for a while, hopefully all is good. Your well being and health is way more important than our entertainment I promise. But its good to see you again, and I'll never not watch one of your uploads
I truly appreciate the love brother!!!! All is fine on my end. Wife & I retired and are spending lots of time with grandkids. I do videos for fun, so I probably won't be pushing them out once a week anymore, but I'm still making them as I feel the need. Cheers bro!!!!!
@TROYCOOKS Completely understand, bud. Only live once, gotta spend time with the family whenever possible. We ain't getting no younger 😂. I don't have grandkids yet but I do have 2 sons and times flying by. Take care, friend!
T Roy. I’ve noticed you slow down your videos a little bit. I get it. I just want to thank you for getting me through Covid. You were a staple of the time I had on my hands. You got some great videos out there buddy.
I appreciate the kind words Tim and I'm happy I was able to help you during that period. It was rough for us all. Cheers brother and thanks for watching!!!!!!!!!
I'm glad you put "the beefy side" of the chicken wings toward the heat - lol You can't beat a good sauce, that's for sure. - Your wings look great. Nice to see Karen in there - Cheers to both of you!
Love cooking with the vortex on my Weber! I cook things very close to how you just did it. Though I don't like wings, but prefer thighs and drum sticks. When cooking the drum sticks, I dampen it down a bit to slow things down. This helps render the tendon in the leg. A low an slow works best in this case. Then the same style sauce once done and they are amazing!
Good seeing you are back making videos! I'm a little surprised you haven't had a Vortex in all these years. i know you use the Slow n Sear for steaks... but you can buy a cast iron insert for the middle of your Weber, and put a full load of charcoal and get that plate super duper searing hot. Also, there's a Weber Wok you can get (or use use a regular wok... put a full load of coals in the Vortex, and you can get that wok restaurant level hot.
Yep, I'm a little behind the curve on some things, but I am loving that Vortex. My brother Sean "Moonshine's Roadhouse" on UA-cam told me I should get one, so I did!!!! LOL I appreciate the comment and your support! Cheers to ya!!!
Bravo. Love the videos. Wondering if you can share some advice. I'm guessing that you make BBQ ahead of time for a family get together. If so, what is the best way to bring it back up to temp. I'm planning on pulled chicken (thighs) and pulled pork. Would love your thoughts.
Yes Sir Troy. Vortex wings are my favorite! I know that Gator Shake gave those wings a huge pop of flavor ! Great to see y’all again brother ! Y’all take care and enjoy the family! My mother in law still has that same bowl !
Those are some very old designs on those bowls. Brings back fond memories of growing up eating cereal out of that bowl! LOL Thanks for watching Kent!!! Cheers bro!!!
I've always loved the story of John Young, such a great pioneer and little known piece of culinary history. Definitely will have to try some of the sauce. Thanks for sharing Brother Troy and good to see Karen making an appearance. Hope you're both doing well!
I do love some TX Pete, but it's gotten too spicy for me as I've gotten older. I do still put a few dashes in my beans though!!!! Thanks for watching! Cheers to ya!!!!!
How would you call that grill ? Have to be honest...that's not how we've been using our Vortex. LOL. (don't ask). Great camera presence, very down to earth --- subbed.
Awesome that you got that! I'm from and live in Buffalo, ordered it over the winter, and a family member of John delivered it right to my house! Great people and great sauce! Y'all enjoy!
That's awesome that they hand delivered it to you from the family! That is some excellent sauce and I can't wait to try it on some seafood and pork! Cheers to ya Brian!!!
I actually didn't like it tasting it directly out of the bottle, it didn't have that "It" factor that blew my mind; However, having it on the wings was an amazing experience which I will definitely do again. I hope you enjoy it as much as I did!!!
Your wings look great! A bit of actual history though. Wings first appeared on a menu in the late 1800s, however they were listed as breaded. John Young, with his Mombo sauce, started selling breaded wings in the early 1960s, which would mean he was not the creator of them (Due to them being battered and fried on a menu from the late 1800s.) The wings that we eat today, and are considered to be the “Original” wings, were created by Teressa Bellissimo, who is credited for cooking the wings with no batter, and serving them tossed in a sauce, back in 1964. This history is supported by Time, History Channel, Chicken Wing Council, and countless others 👍
missed your videos. sometimes at work ill randomly sing your opening song haha. makes the day pass a little bit and catch. especially since my name starts with T.
This is pretty much the only way I cook wings now. I rotate the lid 1/4 of the way every 10-15 minutes and flip the wings after the second lid rotation.
@@TROYCOOKS Thank you for all of the entertainment and tips over the years. And I should have said flip them and then rotate the lid for the second time. That would be about half way through cooking time. You can also try putting unlit coals in the vortex and adding a firestarter. Top down burn that will get screaming hot (it takes a bit of time) but stays screaming hot for plenty of time.
Yo T-Roy, I wanted to come on here and tell you that I made some ribs and was presently surprised. I did the 3-2-1 method. Spritzer with cranberry mango juice and when I wrapped, I put some Bravado Pineapple-Habanero sauce on the ribs. They turned out amazing. Spicy to my lips but sweet on taste. Soo good

Hi Troy. Always enjoy hearing from you. I’ve had a vortex for about a year. It’s very useful and can be used top up or top down. Best wishes from the San Francisco Bay Area.

This is your favorite subscriber from San Diego, got a new phone and lost access to my old username. Them wings looks mighty mighty fine! Gonna havfta try me out some for sure!
T-Roy uncle Steves Gator rub is that the secret? Or is it John Young's Mambo sause? Man you got it going on with this BBQ chicken wing recipe from down deep in the heart of Texas. Nice to see a brother I hope all is good in your world, I miss you. Tell Karen I said hi! Me and Kyung or doing great! Got back in the game. Me and Kung miss you! Cheers on your recipe and good luck my friend! .
Hey Glen, all is going well on my end also! We have moved to New Mexico to be close to our kid and his family. I have 2 grandkids now!!! I can't say whether it's the Mumbo sauce or the Gator shake that was the secret ingredient, but the two together was a heavenly combo!!!! The sauce by itself out of the bottle tasted like a thinned out BBQ sauce with a slight vinegar flavor, but once it was on the chicken and heated up/dried out a bit on the wings, it was a different flavor which I can only describe as a mix of Southern thick BBQ sauce mixed with a North Carolina sauce. The Gator shake sat on that chicken marinating it in the fridge for 6 hrs and it really flavored all of that chicken, then adding that sauce at the end was the kicker for some extra flavor. Excellent flavor with that combination IMO. Give Kyung a hug!!! Miss you both also. If you are ever near Santa Fe or Albuquerque, give me a holler so we can get together! Cheers my brother!!!
Hey Steph, I'm happy you are getting out of CA. I have family in MO and it's a beautiful state. Have a safe move and tell William I said hello!!! Cheers!
That Gator Shake is good stuff! I was always under the impression that Anchor Bar in Buffalo NY were the orginal wing/sauce makers. Im definitely going to try some of that sauce though. Thanks for sharing
The Anchor Bar created the original Frank's mixed with butter. Which means the didn't actually create the sauce. The did cut their wings into flaps and drumettes. John Young served his wings whole. The question is did John Young really create his own sauce? The name Mumbo (or Mambo) sauce traces its roots to Chicago and Washington DC. Chicago was first, but the DC version is less of a bbq sauce and more ketchup mixed with duck sauce. Capital City Mambo Sauce is the popular one in the DC area. A lot of the Asian owned carryouts use that or make their own. I always have Capital City in my fridge, both regular and spicy. I use those in place of anything I would otherwise put ketchup on.
Hi T-Roy! Thanks for sharing this video! May I ask- does this "vortex" thingy eliminate smpke somehow? I do not see a whisper of smoke in this video! Maybe the charcoal is a "smokeless" brand? If so, please elaborate! Thanks!
The charcoal was already glowing from being heated in the chimney, so no smoke once added to the Vortex. Charcoal will smoke if it's starved of oxygen. The Vortex is like a tornado in a chimney inside the Kettle, so there is a lot of air moving and also no smoke. If I was to light the charcoal briquettes in the Vortex inside the Kettle, then I'd get smoldering smoke from the charcoal lighting. Hope that helps!!! Cheers Michael!!!
It is some great tasting sauce. I actually tasted a sample from the bottle and honestly wasn't that impressed, but once it was basted onto those wings and cooked a bit, it was some of the best tasting wings I've ever had!!! Cheers brother!!!!
I purchased mine on Amazon. I included a link in the vid description, but it's a link for Amazon USA. Perhaps you could click on it and it would take you to the UK Amazon? Anywho, just search Vortex on Amazon. It's around $35 USD.
MUMBO sauce is the Original Chicago BBQ sauce before Sweet Baby Rays. Seriously this is a CHICAGO sauce you got to any South, South West Side Bbq joint that survived COVID and the regulations they will use the original Argia B. Collins MUMBO Sauce. John Young and another person worked for Argia B. Collins in Chicago and took the restaurant to NY and Washington DC. There was a law suit where the family of Argia B. Collins won and now those that make the Mumbo sauce make it under license to Argia B. Collins. Just some fun food facts of HISTORY.
"Hey Mambo Mambo Italiano, hey Mambo, mambo italiano, go go Joe, you mixed up siciliano all you Calabrese do the Mambo lika a crazy Hey mambo, dont want a tarantella, hey Mambo no more a mozzarella, hey mambo Italiano, try an enchelada with the fishy bacalao and" Oh wait, you said Mumbo.
Brother! Gave them a try and must say they were the best wings I have ever grilled. The Mumbo is killer!
Thanks!
Glad you enjoyed the Mumbo sauce. It is some great tasting stuff! Cheers brother!

@@TROYCOOKS Hey bud, I just meant seeing the Vortex being used be Malcom. The sauce was your bonus!
Always good to see you Brother Troy.
What's up brother!!!! Great to hear from you again. I appreciate the support as always and wishing you a wonderful Summer of BBQ love!!! Cheers!!!!
@@KevinWindsor1971 cool info, I prefer whole wings over "party wings"
Cheers Michael!!!
love it!
That sauce must be amazing! Great wings Bud. Cheers!👍
It is some great tasting sauce. I actually tasted a sample from the bottle and honestly wasn't that impressed, but once it was basted onto those wings and cooked a bit, it was some of the best tasting wings I've ever had!!! Cheers brother!!!!
Cheers
