In the Lagasse 360 put a piece of aluminum foil under the bottom drip pan running up the door. This will keep a lot of heat in. You can't see in while cooking but it will really help keeping heat in.

If I wanted to could i add a drip pan underneath to catch the drippings? Also, do you think I could do a bigger one for Thanksgiving? Would it have cooked correctly on the roast or bake settings?

You'll have to check the temp periodically to discover that answer. Please let us know how it goes.

why did you change the temp. that is why it took longer
With rotisserie cooking, it's not about speed.
We purchased our bravo two months ago. Have not had one decent thing come out. It is not user-friendly
I usually use 350 for 1hour 30 min for rotisserie
