- Well, street food fans & foodies.......this is a real treat; in this video Chef Kamal kindly shares his special recipe secrets, showing us exactly how he makes Mumbai Junction restaurant's highly acclaimed version of Mushroom Chilli & also their delicious Paneer Bhurji.
Chef Kamal makes it all look so easy, but we all know that to make food taste as good as this, takes many years of learning and experience & indeed we discover that chef Kamal has garnered together his many years of restaurant experiences in India, Dubai & London to now be serving the good people of Harrow.
Mushroom Chilli Recipe:
Button Mushrooms (cut into quarters).
Wheat flour batter.
Vegetable oil.
Finely chopped Ginger & Garlic.
Sliced Capsicum (red, yellow & green).
Schezwan sauce.
Salt.
Ajinomoto.
Finely ground white pepper.
Soy sauce.
Cornflour paste.
Chopped fresh coriander leaves.
Sliced spring onion.
Paneer Bhurji Recipe:
Bhun onion.
Tomato & onion "yellow gravy"
Grated paneer.
Vegetable oil.
Chopped tomatoes.
Finely chopped garlic.
Chopped green chillies.
Ginger (cut into matchsticks).
Chopped fresh coriander leaves.
Tumeric powder.
Jeera powder.
Chilli powder.
Salt.
We can gladly confirm that both dishes were genuinely delicious !!!
(We also had Lasooni (Garlic) butter Naan bread freshly made in their tandoor oven - this was also delicious).

Love the way u shoot the video it's a great experience of cooking by master Chefs in hotels that's hands off man . Am an Indian I have tasted all the dishes that shown in your series of videos but once see this it's make me feel hungry . Hats of man Ur positing the video in a real way without adding any thing .

I think he said Brown(ed)onion. Could be just deep fried onions pureed!
It's caramalized onions.. you don't fry them, just cook the finely chopped onions on a low-med flame for a longer period of time (add salt to hasten the process)

It s a mixtured of grounded red chilles...tomato.. Onions..dhaniya powder..they give colour and aroma.. When they are added in a semi-liquid state..

What was the the coating for mushrooms before they got deep fried?
Nitin Toms a slurry or mixture of flour and water mixed together and mushrooms are coated in it and fried
It probably...CORN FLOUR...back in india we use the same CORN FLOUR TO MAKE GOBI CHILLI.. COMPARATIVELY MORE DELICIOUS TOO
