    PANEER BHURJI RECIPE INGREDIENTS:
    Vegetable Oil (Tel).
    Garlic finely chopped (Lasan).
    Ginger Paste (Adrak).
    Juliennes of Ginger.
    Cumin & Coriander Powder (Dhana / Jeera).
    Tomato Puree Sauce (Tamata).
    Turmeric (Haldi).
    Chopped Green Chillies (Mirchu).
    Master Onion Gravy.
    Grated Paneer.
    Bhuna Sauce.
    Salt (Nimak).
    Spring Onion (Lili Dungri).
    Fresh Green Coriander (Dhania).
    Knob of Butter (Makhan).
    MIXED VEGETABLE SUBJI RECIPE INGREDIENTS:
    Veg Oil.
    Cumin Seeds (Jeera).
    Garlic Puree.
    Ginger Paste.
    Turmeric.
    Cumin & Coriander Powder.
    Tomato Puree Sauce.
    Subzi Masala (Garam Masala).
    Water (Pani).
    Mixed Vegetables (Carrots, Green Beans, Peas, Sweetcorn, Potato, Broad Beans).
    Master Onion Gravy.
    Bhuna Sauce (B.I.R.).
    Green Coriander.
    Butter.
    Roasted Cumin Powder.
    Spring Onion.
    This is Punjabi / Indian Vegetarian food at it's very best
    ✓ It is a real privilege and honour because in this video we get to go into the kitchen of one of our favourite Restaurant's in Leicester; where Chef Krishna reveals some of his recipe "secrets" for some wok stir-fry classic Indian / Chinese Street Food style dishes.

    from 10:33 to 11:09 Chef Krishna kindly says what the indredients are that he uses.
    from 11:10 to 15:18 gives an insight into what preparation is required before the restaurant opens, we are given a brief masterclass in cutting and chopping techniques.
    Some of the ingredients used are:
    Vegetable Oil (Tel).
    Sugar
    Chinese Salt / Ajinomoto (msg)
    Salt (Nimak).
    Light Soya Sauce.
    Tomato Ketchup.
    Dark Soy Sauce.
    White Pepper.
    White Vinegar.
    Chilli Sauce.
    Garlic and Ginger Puree (Adrak & Lasun).
    Freshly Chopped Green Coriander (Lila Dhana).
    Chopped Green Chilli (Lilu Lasun).
    Chopped Celary
    Chopped Onion (Dungri).
    Sliced Chilli & Celary.
    Spring Onion.
    Diced Capsicum & Onion (Simla).
    Carrot & Cabbage Matchsticks.
    Note that; in Indian restaurants dishes are cooked on a very high heat which delivers a slight smokiness to the cooked food and gives that distinctive restaurant flavour and character to a dish.
    The guys were very busy at most times of my visit and I didn't feel it appropriate or right to keep asking too much of what the recipe ingredients were

    Never tire of watching chefs at work. Really good prices for a lot of food although since learning the master gravy/base gravy secret, I haven't had a take away for months. ;)

    All looks lovely but I'd have added freshly diced tomato, onion and pepper to my Bhurji rather than a base sauce. Paneer is soft and the contrast of crunchy peppers and onion would offset things beautifully. But I understand this is a restaurant and they need to turn the dishes around quickly. Its all good though, I'd eat the lot!
