All looks lovely but I'd have added freshly diced tomato, onion and pepper to my Bhurji rather than a base sauce. Paneer is soft and the contrast of crunchy peppers and onion would offset things beautifully. But I understand this is a restaurant and they need to turn the dishes around quickly. Its all good though, I'd eat the lot!
