Andhra food is the spiciest in India, followed by Rajasthan.... Kashmiri cuisine is very mild as the chillies are not hot.... Assamese dishes can be hot as well with the use of chillies. Kerala with black pepper use and so on
Rajsthani food is nothing in front of village food in Maharashtra ... go and search "Bhakri Thecha(made from Raw black green chillies) and zanzanit(itself means spicy) mutton, Tambda-pandhara rassa(White-red mutton broath with dry mutton)". They served Aluwadi (very mild in terms of spice) as Maharashtra specialty... But it's not! Yes, we do eat aluwadi. But a proper Maharashtrian eats spicy food except for the Konkan region and the brahmin community who eats less spicy food.

The spiciest food is majorly served in three parts of India....the red chilly spiced food in Rajasthan, green chilly food in vidarbha-Telangana-Andhra and raja mirchi infused green chillies in Assam to Manipur in north east. Kashmiri food is as spicy as raw masala punjabi or Kathiawadi(Gujrati ) food along with not so spicy chettinad or malnad food.

You can't really say which state has the spiciest food. Coz every state has spicy dishes. And also there's a difference between spicy n hot. I have traveled a lot and in my experience north eastern states have the hottest food and when it comes to spicy i think south indian states bag the title. But it is very difficult to compare. Different regions have different mixtures of spices and use it in different variations, that's how you get such a magical food. By the way, I would feel Andhra Food has to be the spiciest, It can make you cry!!! North-East has some good spice with the usage of Bhot Jolokia , Bengal - East has elaborate usage of mustard to give you a zing. Central India - Deccan has some very dry spicy food with a lotta chilly that can turn up the heat. South Karnataka is bland, but north Karnataka has some spicy food, Goa spice is also above average with quite a few great fish/beef preparations. Rajasthan also has some different variations of spice - laal mass being at a nice level , finally kerala has an amazing non-veg fare with some great spice play usage on fish/meat. Yet all of these are very different, tasty unique and different... I'm a foody so I love them all - even the litti-choka from Bihar

Korbin is correct . South Indian food is more spicy as Kerala and south Indian region overall grows most of the spices (no heat but more verity of spices ). What I found so far, Maharastra and Rajasthan food is more Spicy (more heat due to Chilly). North Indian food uses more Milk products so more creamy and less spicy . And north central region uses medium spices.

Korbin is correct . South Indian food is more spicy as Kerala and south Indian region overall grows most of the spices (no heat but more verity of spices ). What I found so far, Maharastra and Rajasthan food is more Spicy (more heat due to Chilly). North Indian food uses more Milk products so more creamy and less spicy . And north central region uses medium spices.
