Looks good. Love your ingredients. I 'Santa Maria style' BBq'd two chickens and froze them. Now I have ideas of what to make for dinner tonight or tomorrow. Will try this. Oh. We make quesadillas without oil though. Less grease. And yeah, a little less flavor than fried tortillas. But a little healthier. Thanks for the idea.
Gotta love Santa Maria cooking. That's for sure. Get some tri tips and do them. Oil is preference. I'd marinate them in a little lime juice and some oil. Fried tortillas are the bomb. Gotta love chimichangas!!! but yeah, you can do these without butter or oil. Just crisps them a bit.
Chicken is done at 165 degrees and the temp will continue going up even after you take it off the heat. Breast meat tends to dry out when overcooked. I love quesadillas--usually I just shred some Rotisserie chicken, add taco seasoning and cheese on flour tortillas, then brown on each side. Yum!
Thanks for watching. Technically, you can sous vide chicken at much lower temps for much longer times and kill some of the germs and have amazingly juicy chicken. But food safety is another story. 165 is good. But Amy likes higher temps like 170-175 because lower temps are kinda rubbery texture. If you brine or "salt" your meat, it will not dry out. I did many videos on that. Marinating also helps. Rotisserie chicken is great. agree put some seasoning and cheese. Pretty easy and amazing.

Ummm... Isn't butter a dairy product? Also, when cooking protein you want to take it off the heat 3-5 degree below the recommended cooking temp. The residual heat will continue to cook the meat.
Butter obviously is dairy. I am allergic to milk protein. Butter is the milk fat so I don't react to it.
Thanks Aaden. Yeah, we let the meat rest for several minutes while we got other stuff done. She could have cooked it a bit lower like you suggested, but she really dislikes meat that is around 160-165 for its texture. So in her case, it didn't matter. For most people, cooking to 160 and letting it rest will bring it up to 165. Gotta be food safe for poultry.
I want to see the steak video! I am not crazy about black beans, what is a good substitute ?
I'm not crazy about beans either. I go to Chipotle and have them hold the beans and put more fajita stuff in my burrito. I still gotta edit the steak video. Hoping to have it up Thursday night. I ate the one steak quesadilla. Will eat the rest of the steak on something else. Maybe with potatoes. It came out really juicy, but then I marinaded it overnight and cooked it very high temp for short time.

I'm allergic to dairy too, it gives me hives. Have you tried the "Ciao - Tomato & Cayenne" cheese slices yet? I think Field Roast Makes them. They sound awful, but are delicious. A little bit of spice to them and they melt really well on burgers. They're my favorite vegan cheese. They make a plain version too, but it's not as flavorful as the tomato & cayenne.
What brand and name is your knife Amy? Can you get it on Amazon?
