Just made the beans they taste amazing. Suggest it needs some heat tho. Cayenne Pepper and some crushed red pepper. Also adding Chili Powder is great too. cheers. Personally this is going on huevos rancheros.
This is totally plant based. It's main ingredient is black beans which is a plant, the cheese is just an addition. I keep wondering why the line now days is your either an omnivore or vegan. It's like vegetarian got thrown out the window. You can totally include cheese and still be plant based.

I'm going to be doing Meat Free Monday, regular Tues and Weds, Fish Thursday (your Shrimp and Brown Rice Soup recipe looks amazing and is coming in there!) and Falafel Friday. Any chance of such a varied weekly meal prep coming in the future?

Hi Kevin, great recipe, glad you were inspired !!! Re gas’s and bloating from beans, I understand that this is cased be certain sugars that are produced as beans are cooked. To avoid this “side effect”, canned beans should be thoroughly rinsed . If liquid is needed, I agree with you and add broth. When cooking your own beans from the dried corn, the cooking water should be changed a couple of times during the cooking process and, again, the beans well rinsed before use (yes, a pain, personally will go with rinsing canned beans, huge time saver!). This should reduce or eliminate abdominal bloating and gas. Thanks again for the great vid 😁😋!
Top it with sliced avocado, pickles jalapeños, sautéed red onion, & almond ricotta. Deliciously vegan with a side of cilantro lime wild rice. Yummm... Also cooking the beans (if you are using dried beans) with dried sea veggies like wakame or kombu helps with reducing the gas.
