Cotija is a yummy crumbly cheese that's on the tostada. And, of course...add fresh cilantro and tomatoes! Tostadas are perfect for customizing to your favorite tastes!! YUM!!
I'm going to follow this recipe with the exception of using chicken. Went vegan a while ago due to health issues. This seems like a recipe that is easy to convert to another food lifestyle.

Big Green Chiles fan as well! I put mine in everything as well. Love them in my scrambled eggs. You guys never fail to impress.
