    The restaurant I Sodi in NYC by Rita Sodi makes the single greatest lasagne I’ve ever had. It was a lasagne bolognese with lots and lots of layers and today we are going to recreate it at home. Thank you for 1 Million Subscribers.

    So, a few days ago my 9 year old daughter decided to make her and her brother's packed lunches for school the next day while I was elsewhere in the house. I came in to the kitchen with her surrounded by ingredients, chopping cucumber watching Not Another Cooking Show while she prepped everything 😂

    I was living in Concord MA back in 1969 and came across Julia Child cooking on PBS. My Mom came in and was surprised to see me watching Julia instead of out rough housing with the rest of the guys. I mean I would come home covered in dirt, mud, skinned knees, bleeding (not every day) from riding dirt bikes, horses or whatever sport was in season. I explained that for some reason I found watching her not only entertaining but relaxing as well. And as an added bonus was learning about cooking.
    Many years later, married and having to eat I began to start cooking. Occasionally I would have my parents over for dinner and my Mother (may she rest in peace, couldn’t cook at all) would ask where I learned to cook. And I reminded her about watching Julia.
    Fast forward to today and after finding your channel and watching your videos I get the same feeling, I find them interesting, informative and at the same time relaxing.

    My grandmother was from Padova, in Italy, and she cooked lasagna roughly in the same way, with a layer of chiodetti mushrooms in the middle, the best food memories of my childhood, you're doing it the right way man, cheers.

    When I first saw this show making fish and chips, I was amazed. Later the grilled cheese sandwich ones with the backstory was inspired. Then the feast at a restaurant with the cookie tins and brother was so grand. I liked them all and learned much. I thought, "what a star." Very high quality and relatable. Congratulations on the UA-cam million award. I love this channel and save them all. Don't quit now.

    I used this wonderful recipe for Christmas this year and the results were amazing. The only trouble I had was that the first two homemade pasta sheets I dropped in the boiling water immediately stuck together, which ruined both sheets. So I added a small amount of oil to the water, which prevented sticking from then on, and I still had enough pasta to complete the recipe. To roll the lasagna sheets, I used a rolling pin with great success. I am eagerly waiting on an Atlas 150 pasta machine I just ordered, noting that's the machine I have seen used on this channel. I changed the bechamel part of your recipe slightly by using a sweet onion (it's what I had) and I infused the butter with the onion first, then removed the diced onion from the butter with a strainer before making a roux with the infused butter.

    Amazing as always my man. I’ve been making my lasagna like this for years. At least the basic steps (minus making my own pasta). I never thought to make an elevated béchamel and also never considered the additional layer of ragu on top. You’re a fantastic chef and your story is truly inspirational. Grazie mille!

    You're as authentic as it gets, bubba. You're all substance, zero fluff. That is some insanely delicious looking lasagne. I do think Chef Jean-Pierre has the proper method, though, and that's not even eating the lasagne until the next day. A night in the fridge allows you to get the perfect slice. Who could do that? Not I.

    Can't wait to try this. I'm a bridge painter by trade, but have also worked as a private chef. Videos are very inspiring. In fact, I'm retired now I'm going to be buying a food truck very soon.     I’m a huge fan and so grateful to have found this channel. I tried your bolognese recipe recently and it went down a treat! I noticed some differences in your technique from the bolognese here vs the traditional bolognese and I was hoping you can help me understand the changes (no doubt you are super busy and likely may never even see this comment… but trying my luck regardless!)
    - before you cooked the meat after the veggies, but this time you cooked them separately, how come?
    - you put the bolognese in the oven this time but on the stove before?
    - SO much easier that you put all the veggies in the food processor once, vs last time you did it 3 separate times (I was wondering why you did that!)

    I was just in Bologna. Had this lasagna on “foodie lane” under the arch right off Piazza Maggiore. It had about 30 layers. Absolutely scrumptious! Now I understand. Lot of work!

    I've never made lasagna with beschemel. Always with ricotta and mozzarella. I definitely have to try this. It looks intensely flavorful.

    One of, if not THE best cooking channels. I live a busy bachelor life paycheck to paycheck, so some of the recipes are beyond me at the moment. But just watching you teaching good technique...That, Stephen...this is why I love this channel.     I made the bolognese for my family tonight. just put it over some pasta. Didn’t have time to make fresh. This bolognese is the best bolognese I have ever made or eaten. Thanks for the recipe.

    Maybe this is the time to say - your channel really helped step up my italian cooking game. Found you sometime early in the corona and learned. Your style was (is) completely unique, stylish, and effective at teaching. A year or so ago, I flew back home and cooked my family (among them my Italian uncle, my family's famous-to-us cook) a penne vodka. He didn't want any cheese on top, AND he wanted seconds. With the rest of the family wandering off, we talked about foods we loved. It was - without a doubt - my greatest cooking achievement. That alone - if I ever saw you around NYC - would earn you one bro hug. Thank you for creating this channel to pursue this craft you clearly love. Can't wait for your next million.
