    I actually grow up with it, as my family and me are small olive oil produsers in a small village south of Greece. Pure organic, my father was soooo against any chemical. Every year I cant wait for the time to collect and press the olives becouse the best part is when you grill fresh bred on the fire place of the pressing house and as the fresh olive oil comes out then you make one pass of the grilled bred, add a dit of salt and eat it with some local wine!!! Paradise!

      This was once normal "peasant food" in all the Mediterranean countries.
      I know because I spent 5 years of my childhood on an island in the Mediterranean, in the early 1970's.
      People didn't have much money, but they sure did have 1st quality food, home- or locally- grown.

    Thank you, doctor, for your appraisal for E.V.O.O. Coming from a family that makes olive oil in La Puebla de Cazalla (Seville, Spain), I’d like to make an observation: if the oil is less filtered after press, which has more sediment and a bit of water, it solidifies easier in the fridge than the filtered ones. Normally, olive oils meant for frying are filtered all the way, to prevent smoke. But the ones meant to be consumed raw (salads, etc) are less filtered so they are a bit more tasty, more intense, and, by the way, keep more polyphenols intact.

    I live in Greece. We eat big pots of vegetables (ladera) cooked in olive oil. The problem is that the price of Olive oil, especially the good virgin olive oil has gone through the roof. They used to sell it in 5 liter cans. Then they went to 4 liter cans, and now it is in 3 liter cans. A 5 liter can used to cost maybe 30 Euros. Now a 3 liter can costs 45 Euros or more. It has now become a luxury item. Only the well off can afford to eat a classic Mediterranean diet.

    Coming from a family of olive oil producers in Central Portugal, I can confirm that EVOO starts solidifying somewhere around 10º C / 50º F. Stored in our traditional cellars, it's frozen solid during Winter (temps here range from a maximum of about 12 ºC / 54 ºF during the day and a minimum that can normally be as low as -3 ºC / 26ºF during the night).

      How to store olive oil
      The optimal temperature for storing olive oil is between 12 and 18°C : for this reason it is necessary to keep the oil away from all possible sources of heat that may be present in the kitchen. Likewise, it is preferable to protect the containers from excessively low temperatures, avoiding storing them in outdoor cabinets, especially in northern areas.

      This belief needs to be debunked!
      Many consumers, to evaluate whether the oil is genuine and of quality, perform an “ancient test”: they leave a glass of oil on the windowsill in winter and evaluate whether or not white crystals form, believing that only in the case of a positive result is the oil good.
      In reality, the freezing process of the oil does not indicate its genuineness or quality, but is a completely natural process called crystallization. This phenomenon depends on the composition of fatty acids, some oils crystallize at higher temperatures and others at lower temperatures.
      I leave the oil in the fridge: that way it preserves better
      The ideal temperature for storing oil is between 12°C and 22°C .
      It is very important that the oil does not freeze because, when thawing, the bonds of the fatty and phenolic substances break.
      What does this mean?
      First of all, a loss of precious substances, an impoverishment from an olfactory and gustatory point of view and a thawed oil will go rancid much more quickly.
      It is also very important not to store the oil at temperatures above 22°C, because high temperatures favor the oxidative processes that lead to the rancidity of the oil.
      So do not store the oil in the refrigerator because it could cause the fats in the oil to solidify, making it cloudy and thick in consistency. Furthermore, exposure to very low temperatures can alter the flavor and aroma of the oil.

    I love my olive oil with garlic and just a touch of Celtic Sea salt. Make it fresh every day and put it on just about everything. Veggies, meat, and yes, the occasional homemade organic bread.

I'm sure there are loads of people from all of those countries plus many more who's family produces olive oil, who could say the same thing. However a significant amount of what is labelled as extra virgin olive oil, just isn't. extra virgin & in some cases, isn't even pure olive oil.

    The doctor is right. The cost went up so much I once bought Crisco. Before I disposing of oil after frying I put it in the freezer. The olive oil froze but the Crisco didn't. Never bought again.

    It's extremely hot here in California, USA. Started this am early with Plateful of salad. But this am, changed it up. Always go light on dressing but today, cut even that with evoo and apple cider vinegar. Turned out really well. Will salad up thru the heat waves of summer this year. Get some yogurt next and finish off with fruit. Gotta take care as a gereatric now. Always ate well, but have to go light on the heavy meals anymore. Weathering the one hundred ten degrees without air conditioning this summer quite well. Found that transitioning from refrigerated air to outside debilitating, and makes you dependant on it. Getting my freedom back.

      @@user-jo5fz8iw3b well it's either pay the mortgage, insurance, food, etc. Or pay a gigantic power bill. When winter comes it's huge too. Rather have heat then though running the central heat and air is a monstrous bill. Up to and exceeding seven hundred a month. Many older folks in California have to deal with such usurious monopolization of the utility company. Water services are getting there too. That's why so many folks that can are leaving the state. I learned how to get by from my depression era family. Can get by ok.

    Proper olive oil will actually smell on olives too. Most manufacturers blend the oils with vegetable oils or lesser quality olive oil. This was told directly from an olive oil farm producer in Australia.

      Yes, I just commented on this, the olive oil I buy in Denmark imported from Italy, Spain and Greece, they all turn solid in the refrigerator, so solid you can't get even a single drop out unless you let it sit out for a while.

    I spent 5 years of my childhood on an island in Spain, in the early 1970's.
    Almost all food was locally produced.
    A common lunch was bread baked from whole-grain wheat flour, dipped in the local cold-pressed olive oil, with local Manchego and perhaps a tomato-salad with olives, and naturally a glass of the local red wine.
    This was normal "peasant food" back then.
    I still eat that frequently, although all 3 basic ingredients are considered "delicatessen" in my (Nordic) country, and priced accordingly..

    If for some reason your olive oil has expired or you have tainted stuff... Put it in your diesel tank. It is an amazing fuel conditioner.

    When my regular oil was out of stock I reluctantly bought Bertolli “organic extra virgin olive oil” - it failed the test. The store gave me a refund but refused to put a warning notice next to it on the shelf.

    So I used your test and put a jigger of EVOO from Costco into the frig for 24 hours and guess what? It DID NOT get cloudy. Yes, it was clear!!! So Costco EVOO is not pure.

      It's a myth
      the oil freezes then it is genuine and of quality
      This belief needs to be debunked!
      Many consumers, to evaluate whether the oil is genuine and of quality, perform an “ancient test”: they leave a glass of oil on the windowsill in winter and evaluate whether or not white crystals form, believing that only in the case of a positive result is the oil good.
      In reality, the freezing process of the oil does not indicate its genuineness or quality, but is a completely natural process called crystallization. This phenomenon depends on the composition of fatty acids, some oils crystallize at higher temperatures and others at lower temperatures.

      Try another brand for comparison.
      If you eventually find one cloudy, let us know if you notice any other differences.
      Where I am it is difficult for me to do at the moment.

      True olive oil will never be a cheap brand, it will come in a dark glass bottle and be pricey.

    Dr. Mandell, The olive oil I have been our heading have won awards. The problem I am concerned with is, When I put the salad dressing I have made with it, it always turns really thick and, almost the consistency of Vasaline.
    My Question is. Does these mean I am being duped into
    Thinking this is quality EVOO??
    Also Dr. Is Avocado oil as beneficial to one's health as EVOO?

      If the other ingredients in the salad dressing are too cold, they could cause the olive oil to thicken. But at room temperature, the olive oil itself should flow freely.

    When extra virgin olive oil solidifies and freezes in the fridge, it does not necessarily mean it is pure and original. Yes, even fake extra virgin olive oil can solidify when frozen overnight. The solidification of olive oil at low temperatures is a natural process due to the presence of monounsaturated fats, which can happen regardless of the oil's purity. Therefore, the ability to solidify when frozen does not guarantee the authenticity of olive oil. However, the purity and authenticity of olive oil are best determined through other means such as taste, smell, color, and certification labels.
