Memphis-Style Ribs on the Weber Q for Labor Day Weekend

  • Today, I'm making Memphis-Style baby back ribs on the Fire Escape.
    Rub Ingredients:
    2 Tablespoons Paprika
    1 Tablespoon Brown Sugar
    1 Teaspoon Old Bay or Celery Salt
    1 Teaspoon Chili Powder
    1 Teaspoon Garlic Powder
    1 Teaspoon Cumin
    1 Teaspoon Dried Thyme
    2 Teaspoons Sea or Kosher Salt
    1 Tablespoon Black Pepper
    Mopping Sauce Ingredients:
    1/4 Cup - 1/3 Cup Apple Juice
    2 Tablespoons Cider Vinegar
    2 Tablespoons Dijon or Yellow Mustard

    Had a q220 for about 10 years now and love this recipe, got a raised rack and it transformed my ribs, keep the videos coming

    This is a great recipe and prep for the Weber Q1200, which I just purchased. I grilled some chicken today and it was great. Thanks for the excellent ideas. I will be using your ideas.

    Now that's what I'm talking about! Memphis-Style is the way to go! An additonal tip is when you take the ribs off the grill, place the foil wrapped ribs in a brown paper bag for about 30 - 45 minutes to make them even more "fall off the bone" tender. Great Job once again!

      So you mean, take the foil pack ribs off the grill and then rest them on the counter in brown paper bags is that right?

    I cooked these on low heat which on this grill runs about 350 Fahrenheit. On other grills that can get lower, you can cook ribs at about 225-250 degrees

      I work in advertising. Used to stop at Cracker Barrel in Valdosta al the time on the drive down to FLA. Perfect way to break up the drive.

    Wouldn't two layers of some small disposable cake sheets serve as a roasting shield with some holes poked through?
    With a regular rack on top.
    Can't see the difference, but love how Weber has this product on hand regardless.

      That'd work great. Even two layers of tin foil would work. Here in the U.S. Weber has actually discontinued these products. Thanks for watching, Kathul.

    Looks very nice. Did the hickory smoke add some flavour as well, was it noticeable?

      The hickory chips did add flavor, yes. Not as noticeable as on a charcoal grill or smoker, but it was definitely there.

      Since the Q is a lil smaller I do 1 rack in the oven and 1 on the grill. Will be trying these this weekend. I cook mine half in foil half out so glad to see this method on the Q! Happy Labor Day man :)

    do you have trouble keeping that smoke pouch smoking? i use them but it won't smoke unless i turn the burners to it's highest setting.

      Yes, I've been having the same issue. I'm finding that my Q runs hotter on the right side where the gas comes into the grill. I'd recommend keeping the smoke pouch on the right side of the grill and I think that should keep the chips smoking. Let me know if that works for you.
