Chicken thighs, wings, and the oysters, are the best parts of the chicken! I appreciate that you said you almost can’t over the thighs, cause even a thigh that is Cooke too long still tastes great.
I rarely use a thermometer with thighs. Just err on the side of overcooking. The skin will be crispy and the meat will still be moist. These thighs were pretty inexpensive too. Can't go wrong.
I made my take on these for lunch yesterday. They came out fantastic! I used Sriracha hot sauce for the glaze so I added a bit of Asian flare to the rub by adding 1/2 tsp of Chinese 5 spice. I'll be making this again I promise you.

Even though we prefer using our Weber Kettle when cooking ribs. However, love the convenience of the Q and ability to create great afterwork mid-week food quickly means it gets fired up at least 3 times a week at our place. Very good tip to finish off the thighs on the roasting rack. I'm curious as to whether you tried leaving them on the grate for the entire time and turned the temperature down after you had browned the outside?
When cooking thighs like this I always put a couple of cuts through the skin down to the bone before applying the rub. This helps flavour (note the correct spelling :-) ) the meat and speeds up the cooking time. Great video as usual. Have used my Q1200 this evening to cook Chicken Paillards from Weber's Mediterranean BBQ cookbook. Really easy recipe, ideal for the Q1200, you should check it out. Can send you a copy of the recipe if you like.
Recipe I used didn't have olives. It was, make a simple marinade from 1.5 tbs olive oil, 1 tbs white wine vinegar, 1 tsp chopped fresh oregano, 1 tsp chopped anchovy (optional) plus s&p. Flatten out a couple of chicken breasts with a mallet/rolling pin (place breasts in a plastic food bag). Brush on the marinade on both sides and place in fridge for 30 mins. Make sauce from a couple finely chopped shallots, 75ml of white wine and 3 tsp lemon juice placed into a saucepan, bring to a boil, simmer until reduced by 2/3s (4 mins approx), add 75ml of chicken stock, simmer for further 2 mins. Remove from heat. Place chicken on a hot grill for approx 3 mins a side until cooked through. Take off the heat and rest. While chicken is resting reheat sauce and add three tsp rinsed/drained capers plus 40g of slighty salted butter and whisk in (manually). Pour over chicken and reserve some for extra. Serve with a mixed leaf salad dressed with French dressing. This is becoming a regular dish for us as it takes no time at all and we can sit outside and enjoy it after work before it gets too late.
I forgot to say that some chopped parsley can be added as a garnish. I hope you give this a go even if it it is just for you own pleasure and not for your channel. This is a go to dish for me when I don't have the time after work to light one of my Weber charcoal kettles or portables and I can pick up what I need very locally to home.

It might be time to invest in some stainless steel mixing bowls though, your wood one is old!

Nice man. I bbq thighs on my weber all the time. I use the lowest heat setting and they cook perfectly everytime. No need for the roasting rack
