I love Casey!!! He was the reason I moved to nyc when I was 18. I was a nanny and would walk everywhere so I hoped I’d run into him one day. The guy I moved there with dumped me for no reason after we’d been there a year and I was feeling down and that day I saw Casey running along the east river and it totally changed my vibe for the rest of the day. He’s nice and real with everyone and that’s one of the reasons I’m a fan. Running into him made me realize and remember why I moved to the city I love so much and helped me during that difficult time. Cant say the same thing about nyc anymore though thanks to de blasio killing nearly all the mom n pop shops that gave their all to succeed in the best city in the world. But I’ll always have happy memories of living there and it started with Casey.

The first one, I'm a long time resident of Japan and fluent in Japanese. That is way fancier than anything you would find in a convenience store in Japan in terms of ingredients and technique, but he's basically right on everything but the meat. In Japan, the burger patty is more like meat loaf, with all sorts of other stuff mixed in. The Japanese terms he's using mean simple things like 'ground meat' or 'white bread' or 'plain bread crumbs.' I never thought of a "katsu sando" (translation: cutlet sandwich) as a burger, but if your definition is basically 'ground meat sandwich' then it qualifies.
If you ever worked in a kitchen you'll no how wrong that saying is. They are on their feet 8,10,12 hours a day ,in a hot environment sweating. Sorry I just hate that saying, no offense to you

While living down in Cordoba Argentina I discovered there, all over the province, urban or rural, slum or uptown, a most delicious variation of the burger/empanada which takes its roots in Middle Eastern cuisine: empanadas árabes (Arab empanadas) I'd really love for y'all to model those because you can't find them in the States. They're regional even to Argentina. The best ones just have onion, tomato, lemon juice and a small pinch of salt with the beef left in the fridge overnight (anyone who says just 3 hours is a sacrilegious liar to all food holy). You fold the empanada discs into triangles but slightly open in the middle. Glaze with egg or butter if you like for some browning of the shell. Serve with ample extra lemons on the side for maximum stress relief from squeezing and dining. Goes great with Coca Cola and if you can find it a soda called Pritty Limón. Also regional to Cordoba and Catamarca.
