    Soft gulab jamun with regular milk - No milk powder, no ready mix - Gulab jamun - Diwali sweets
    Gulab jamun is a classic Indian sweet made with milk solids ,sugar and cardamom. It is often served during festival meals such as diwali.It has different names throughout the country as gulab jamun, kala jamun, Lal mohan, pantua ,etc. Here i have tried gulab jamun without milk powder , koya or kova. As koya is not easily available i have tried this completely using milk. I have also tried jamum using milk powder which can be done very quickly ,you can try that too.

    INGREDIENTS:
    Milk 1 litre
    Maida 1/4 cup
    Baking soda 1/2 tsp
    Sugar 1 cup
    Cardamon 2
    Saffron a pinch
    Water 1/4 cup + 2 tbsps
    Oil for frying
    METHOD:
    1. Take a litre of milk and boil it .
    2. Keep it in a medium flame and stir it continuously to form a kova or koya.
    3. Transfer this to a bowl.
    4. When the heat is bearable add some maida, baking soda and kneed it into a soft dough. Add water if required. Keep it aside.
    5. In a pan add sugar, water, cardamom, saffron and stir everything well to make a sugar syrup.
    6. Switch off the flame when it gets one string consistency and keep it aside.
    7. Grease some oil in your hands and take small quantity of dough and make a small ball of it. Do this for all the dough and make small balls.
    8. Heat some oil in the pan for frying the balls.
    9. Deep fry the balls in the oil on a sim to medium flame till golden brown.
    10. Transfer the fried balls immediately to the sugar syrup.
    11. Leave it for 2 to 3 hrs or until the balls absorbs the syrup.
    12. Transfer this to a serving bowl and enjoy.
