Thanks Elia for posting this. Peter’s explanation of this grip/cut is clear & simple. I always find this one tough to teach. I don’t know why. I’ll try to learn this way.
Looks like Elia has a hybrid stroke, combining the old shoulder pushing blade to the floor, with the new chicken wing. I am having the same conundrum, cuz I learned to do the shoulder push to the floor move. The wrist till wants to bend outwards,and help out(a tiring move), instead of just holding on and letting the shoulder power the cut.

My knife techniques are an amalgam of things I was taught and things I do without thinking - good, bad or ugly.
