I’m Chinese and I’ve travelled to china many times and it’s very beautiful country and there’s a lot of great cities, the high speed rail is very interesting, and it’s pretty fast, but you have to be careful cause it’s easy to book the wrong train. Like you said, the catering on these trains is good especially the snack boxes. The line you were on was a slower speed line, If you go from Beijing to Shanghai you hit speeds of 350 km/h , like you said, you have to scan your passport for everything.
Some great tips: if you want to check on the highspeed train if the seat is booked or not, for some models of the highspeed train, there are some lights becide the seat number on the luggage rack above the seats. If it is red means this seat is booked and someone should seat there now (of course if nobody there, he/she maybe missed the train or left temporaly), if it is orange (or yellow i forget), it should be someone booked that seat but will get on the train at the next stop. if it is green means nobody booked that seat, or someone booked but will not be get on before the next two stops.
Generally speaking, for the water dispensers on China's high-speed railways, the blue water outlet is usually warm water and the red water outlet is usually boiling water.

it is unfair to compare this train G1831 with the Japanese train on cleanliness. This G1831 train started from the east border of China and had run for 7 hours, passed through 15 stations before you guys jumped in, obviously many passengers got in and out before you, Since the cleaning job can't be carried out during running, it is understandable that the carriages can't be as clean as they were when the train just started out. Japan never have such a long distance train, makes it much easier to keep it clean.

中国的高铁350km-400km/h。在2015年是400km/h,后来降速了。2025年升级为400km。日本的新干线最快320km/h。中国的高铁可以放一枚硬币在桌子上,日本的新干线站着都会感到摇晃,并且发出火车的声音!而中国高铁几乎没有声音。
确实网上有测试片段,也有两辆车430的速度互相交汇,理论上国内高铁是可以提到430的速度的,不提的原因也很简单,不符合经济成本。
300-350就是一个在速度和经济上各方面都合适的速度,超过350之后,每提升10公里的速度,能源消耗可能提升20%,非常不划算。
也只有东部繁忙线路是350,西部大部分还是300.
