Coffee Tres Leches Cake

  • Hey guys!
    Are your ready for a delicious, creamy, milky, caramel cake??
    Last week, I tried TatyanaEverydayFood's coffee tres leches cake and wanted to make my own version of it. So, here is my version! With a regular sponge cake without almond flour and with dulce de leche!... technically then more than a TRES leches cake?? LoL
    I loved this version of it! If I could do anything different, I would probably just add more of the tres leches milk soak into the cake layers. I did 1 1/2 cups and thought that would be enough, but actually wanted more! Let me know if you try this recipe and what you think.

    Ingredients for the sponge cake:
    -8 large eggs at room temp, separated
    -1 tsp cream of tartar
    1 3/4 cups sugar (3/4 cups into the meringue, 1 cup into the cake batter)
    3/4 cup oil
    1/2 cup milk
    2 tbsp boiling water with 1 tbsp instant coffee
    2 tsp vanilla extract
    2 cups cake flour, sifted
    -1 tsp baking powder
    *Bake for 350F for 15 min, then 325F for 15-18 untils (or until toothpick comes out dry)
    Ingredients for tres leches soak:
    1/2 cup warm milk
    2 tbsp instant coffee
    1/2 cup sweetened condensed milk
    1/2 cup evaporated milk
    Ingredients for coffee whipped cream:
    4 cups heavy cream
    4 tbsp white chocolate pudding mix
    12 oz mascarpone cheese, at room temp
    2 cups powder sugar
    1 1/2 tbsp boiling water with 1 tbsp instant coffee (cool completely)
    -optional: 1 tsp mocha extract

    This looks good, my dad's birthday is coming up and he told us he likes coffee 3 leches cake so I'll be making a cake with your recipe, it looks simpler than other ones I've seen
    The only change I'll be making is adding more of the leche because it looks too dry to me, we love eating super soaked 3 leches, other than that beautiful cake, thanks for showing us how to make it💚

    I've been trying to look for the perfect icing to decorate and pipe decorations. After several videos of whipped icings, butter cremes, and many other versions, I think I finally found the perfect icing! Whipping cream and pudding mix. Genius! The coffee tres leches cake looks gorgeous! I think I'm going to give it a go. Thanks Jovita you have yourself a fan. 😍

      Thank you Adelaida! I LOVE the whipped cream recipe as well! Along with the pudding mix, it holds its shape as well as buttercream but not as sweet. Perfect for piping! And delicious. Enjoy and happy baking!

      @@motivatinglila It's an 8" round cake, I think 25 is a lot of people for this size cake. I would say it feeds maybe 15.

    Hi Jovina!
    I baked this heavenly cake for the very first time yesterday, for an engagement party and withing 30 min, the came was GONE!!!I made both 8" layers like you did and cut each in half and only used 3 layes and kept one for myself to munch on and I CAN NOT STOP eating it lol. I have skipped all my meals today and just had a piece of that last layer ...without frosting ...thats how good it is.
    EVERYONE MUST MAKE THIS CAKE asap!!!!!!!!!!!!!!!
    Your cake is far tastier and elegant than Tatiana's.
    Thank you so much for creating this fool proof and incredible recipe...I just have 3 questions for you:
    1) How can I turn this into a Vanilla cake, other than just omitting the instant coffee? DO I still need to add the 2 tbsp of hot water to keep the balance of the liquids the same?
    2) If I want to turn this into a chocolate cake, do I only add two tbsp of cocoa powder?
    3) My cake layers stuck a little to the pan upon removal, because I only had a round parchment at bottom...do you think greasing the sides and dusting with flour will help?

      Yay!! So glad to hear that you guys loved it!
      To make a vanilla cake, omit the coffee and hot water. Just do the vanilla extract.

      For a chocolate cake, you would need at least 2/3 cup cocoa powder. I have not tried it before though to experiment how much more of other ingredients needed to balance it out.

      And for the sticking, I add parchment paper to the bottom and the sides. It easily slips out with that technique

    Great recipe. I just made it for Father's day...I used more of the milk mixture tho and still felt it needed a little more. But excellent recipe. I will be making it again for sure! Thank you

    I made this recipe and the cake looked amazing! I messed up the whipped cream twice by overmixing it, but third time's the charm. I'll be sure to make this again and mess with the flavors a bit. Thank you!

    Thank you so much for the recipe. I loved it. Added 1tbsp coffee in each stage and reduced the sugar in the icing to 3/4 and the condensed milk and added crunch to the layers. Anazing amazing. Makes too much though. I got a 5 layer 6 inch cake plus a 8 inch each with 2 layers out of it. My go to recipe from now on!

    Hello. I want to make this cake for my husband’s birthday. I was wondering if would it be okay to omit the pudding mix for the frosting?
    Instead of using mascarpone would it be okay to use cream cheese?

    if i don’t have cream of tartar would it tamper with the cake recipe or is there any substitute i can use for it? thank you! (:

      Hi! It will not make or break the recipe so you can just go without. It helps to stabalize the meringue. I have read that you can also use lemon juice in place of cream of tartar but never tried it before. It is supposed to prove the same acidity.

    I really want to make these in cupcakes. Would that be possible? I only want to make about 18 cupcakes but this recipe seems like it would make a lot more than that. Any recommendations ?

      Yes. Half the recipe should yield about 18 cupcakes

      Hi! This us an 8 inch around. Feeds around 12 people, depending on how big of slices you want.

      Hi! I have heard of people using instant cleargel but I have never used it before. You can also use the whipped cream stabilizer by Dr Oetker

    What kind of flavor does the cheese add into the frosting? Does it make it better? Is it optional?

      It can be optional. You can also substitute with cream cheese. It tastes similar to cream cheese but not as sharp.

      It would not be wrong but would not make a cake an soft as cake flour. and if u do, subtract the baking powder

    What is the difference between separating eggs and beating them together? I’ve seen it done both ways and I don’t know if one is better than the other.

      In this recipe we separate them to whip the egg whites into a meringue

      You can't get a meringue if you beat the egg yolks with the egg whites. Is that what you are asking? Sorry if I misunderstood!

      Yes you can. It will just have a sharper taste. Mascarpone taste a little lighter. Nothing wrong with it, just taste preference!
