What would happen if you mixed them up? Would the engine be fine?

Valve clearance is very important. If the clearance is too much it will be very noisy and if it’s too tight the valve could potentially not fully close. It will likely run but not well and definitely not efficiently. If the valves are staying open than you’ll likely burn them up.
