These chefs were least harsh and understanding chefs among all the other series, which I loved it.
At the same time, I love it when they one of the guy screamed "spaghetti is being traumatized!"
Haha, it's understandable since he works with pasta so much and studies it. The pasta maker takes great care not to break the noodle and when the cook handles it roughly it hurts him.
@joe jitsu I thought it was funny listening to her say you need to stir it every few minutes right after seeing Dario Bressanini's video where you have to cover it and leaves it completely alone.
What I get from these videos is that Italians are in a constant struggle between their respect for tradition & their love of being modern & innovative.
well, an italian chef who i consider modern & innovative is Cannavacciuolo, but he respect the tradition aswell, that's all the fancy stuff, pineapple "pizza" - garlic and onion everywhere (i could go on for a lot) that we actually "hate".
italian food is good for a reason, he's simple :)

Not really, it depends which side you looking at: italian Chefs are always attached to traditions but, as chefs, they know new techniques and some of them are experimenting very interesting mix between Italian tradition and other cuisines from around the world. What really makes a country not open to others is customers: in any country with a strong food culture me tradition you have too many people refusing to try different things because too attached to their tradition, because food for them it means memories, feelings, rites ecc
Yes, sadly here in Italy there is almost a religious behavior when you talk about gastronomy, and we have a lot of closed minded bitchy old people who think they are Innovative, and young cooks are treated like heretics when they cook something differently

Pasta alla carbonara is pasta alla carbonara for a reason, if you add pinapple on it, it's not a carbonara anymore. That's what those "bitchy" old people say to "young" morons.
This is my favourite of the 'experts react' videos as they engage in respectful, considerate, and intellectual discussions about what they are seeing, I don't want to see people criticised, i want to see a thoughtful response. These people understand the videos are made for the masses and while comparing them to restaurant standards, are not crucifying them by such.
You also have to consider that this is different theme. In the other videos there was a very specific recipe, that’s why the chefs were critical about the use of the “wrong” ingredients or techniques. In this video they’re focusing on how to utilise pasta.

anche perché lui è un chimico alimentarista, non dice cavolate e la differenza tra una cosa buona e una no la conosce, nel video infatti dice che il tempo di cottura viene modificato se la pasta la cuoci col calore residuo della pentola a fuoco spento

In un altro video Bressanini specifica alcune cose su quel sistema di cottura.
Prima cosa dice che una volta calata la pasta bisogna riportare a bollore l'acqua.
Poi suggerisce una pentola con un coperchio che garantisca una chiusura quasi ermetica, non a livello di pentola a pressione ma sicuramente una buona chiusura per evitare di disperdere calore sotto forma di vapore.
Terza cosa la temperatura della cucina non deve essere troppo bassa se no per via dello scambio termico, l'acqua si raffredderà più velocemente compromettendo la cottura della pasta.
Ultimo ma non ultimo dice che potrebbe volerci qualche minuto in più per la cottura.
Come viene detto in questo video, la cottura passiva non è adatta alla ristorazione che anzi risulterebbe più costosa e comporta tempi di attesa insostenibili in un ristorante.
Ad essere più precisi, non c'è una regola fissa e l'acqua si potrebbe anche non far bollire mai: tuttavia più si porta al massimo la temperatura dell'acqua, più facilmente per tutta la cottura della pasta rimarrà una temperatura necessaria a far avvenire le modificazioni che devono avvenire in cottura.
In realtà, il motivo principale per cui si può consigliare di tenere ancora acceso qualche minuto dopo aver calato la pasta, (e solo dopo di spegnere il fuoco) è che appena gettata, la pasta ( soprattutto pasta scadente, e marche anche note sono ben comprese nella categoria) tende maggiormente a perdere amido: dunque, se non si gira la pasta in questi primissimi minuti ( cosa appunto da evitare se si è già coperta la pentola e allontanata dal fuoco) l'amido la fa incollare e la rende chiaramente una schifezza. Ma con pasta di maggiore qualità ( anche marche rintracciabili in supermercato, almeno in Italia, chiaramente un po' costose) questo rischio non c'è.
Quindi in sostanza i nostri esperti e Bressanini concordano. Come era giusto aspettarsi.

Ma infatti questi sono video fatti per il consumatore, "per il comune mortale" che spignatta nella cucina di casa... non certo in funzione dei ristoratori..... Lo sbaglio è che tante critiche sono mosse con la visione di un ristoratore, che "devo fare più coperti, devo cuocere più piatti" ecc... Le critiche fatte a Bressanini non le condivido affatto... Io dissento. Nel momento in cui la compro la pasta e mia e ci faccio quello che voglio. Se non possiedo pentole abbastanza grandi per cuocere gli spaghetti, molto meglio spezzarli che farli afflosciare per metà e cuocerli in modo disomogeneo. Mia nonna ha sempre cucinato in pentole medio piccole, e gli spaghetti andavano rigorosamente spezzati per cuocerli meglio. Potrà non piacere il gesto, ma dal punto di vista del gusto è molto meglio.

...It's good to hear the pasta experts acknowledging the fact pasta cooking is improving outside of Italy; in the UK, for example, I remember my mother cooking some tricolore pasta for the first time about 25 years ago: she left it in the pan she cooked it in, along with the water - it became 'wallpaper paste'. Thankfully she is able to cook pasta to a good level. We eat quite good pasta dishes in the UK :-)
And remember we have spaghetti in CANS!

"È sbagliato dire che la pasta si cuoce, la pasta si reidrata" What??!! Allora perchè si cuoce in acqua calda? Come dice il grande Bressanini, l'amido gelatinizza tra i 60 ed i 70 ed il glutine denatura e coagula tra i 70 e 80 gradi. Quindi possiamo dire che la pasta si cuoce. Se la reidratassimo soltanto, (acqua fredda o al di sotto dei 60 gradi) ritornerebbe impasto!

Ma lo dicono anche loro che la reidratazione a freddo farebbe al massimo tornare la pasta impasto, non è che non lo sanno.
Se avessi ascoltato bene avresti notato che poi parlano proprio della questione gelatinizzazione, dicendo appunto che reidratandola a freddo si raggiungerebbe solo il punto di “pasta fresca”. Infatti poi (parole loro) poi bisogna comunque farla cuocere un minutino in acqua bollente.

Io da suo ex studente non posso che adorare i video in cui si parla di chimica applicata alla cucina ma non solo. La Chimica è dappertutto.

I have never noticed a difference between using a coarse salt or a finer salt.
There's not. Salt is always salt, as long as the grams are the same it's fine. Italians tend to use coarse salt for boiling water because it's easier to get the right quantity which is measured in "fists", that's it.
There is only a difference in applications where it doesn't dissolve

Mi sembra che lo abbia chiamato "vetrino". Comunque si tratta di uno strumento specializzato che non ho mai visto in nessun negozio né tanto meno in una casa o ristorante.

Ma infatti tutte queste cose Bressanini nel suo video sulla pasta le dice: che bisogna far riprendere il bollore dopo aver buttato la pasta, che sarebbe meglio usare una pentola di buona qualità che non disperda troppo il calore e che potrebbero volerci uno o due minuti in più di cottura per ottenere il risultato desiderato.

Non capisco le critiche del "pastaro" al centro... "si ma già dagli anni 70 nelle pubblicità facevano vedere l'acqua che bolliva"... Eh?

Mi pare, sinceramente, ci siano alcune imprecisioni nella fase iniziale, quando si commenta Bressanini.
La prima è il sostenere che in realtà ( con bollore o meno) non si dovrebbe parlare di cottura la pasta, perché "non avviene vera cottura, ma solo idratazione"; questo non è vero: devono avvenire delle modificazioni del glutine, oltre che la 'famosa' gelatinizzazione dell'amido ( accennata anche più avanti nel video) affinché la pasta sia cotta, e non basta di certo che essa semplicemente assorba acqua.
Se si mette la pasta in una pentola d'acqua fredda e si fa la rigenerazione, si possono aspettare pure giorni. ma la pasta non sarà mai cotta.
Quando poi lo chef sostiene che la pasta cotta senza bollore resti più "al dente", non è proprio così: semplicemente con temperature inferiori a quella massima ottenibile dall'immersione in acqua ( a pressione standard, ovviamente) l'idratazione della pasta avverrà più lentamente, quindi tendenzialmente quando la pasta in acqua che bolle è pronta, quella in acqua a 90 gradi necessita ancora di qualche momento.
Su quello che dice poi la critica, è ovvio che la temperatura è importante, e in particolare la temperatura principale da tenere a mente è quella di gelatinizzazione dell'amido, che è dai 50 ai 70 gradi centigradi ( quindi, molto meno della temperatura di bollore): quando si reidrata a freddo, l'amido non gelifica e resta la struttura cristallina originaria dei granuli, che danno appunto quella consistenza definita come "vetrosa".
Riguardo poi le parole poco chiare del presidente pastaio, che ad un certo punto sembra dubitare dell'ingrossamento della pasta cotta senza bollore, ripeto: la pasta non si ingrossa come si deve con la rigenerazione a freddo perché questa non permette all'amido di gelificare, ma lo fa con la cottura senza bollore ( oggi nota come 'passiva'), purché ci si premuri di mantenere una temperatura tale da far gelificare l'amido.
Ed è proprio ciò che dicono, mi pare: danno ragione al "grandissimo" Bressanini, dicendo anche che noi cuciniamo la pasta con l'acqua che bolle più perchè abituati a fare così che altro, il problema è che si deve mantenere quella temperatura e questo bisogna farlo considerando la pentola, la temperatura nella stanza, la grandezza della pentola, la quantità di acqua e di pasta, probabilmente anche il tipo di pasta oserei dire. Tutto ciò cosa implica? Semplicemente che o sei Bressanini che fa il sapientino e considera tutte queste cose, oppure è possibile che la pasta ti venga male! Molto più semplicemente lasciando la fiamma accesa si ha una temperatura costante in qualsiasi situazione.
