all purpose flour 400g / 2+3/4 cup
boiling water 167g / 2/3 cup
salt 2g / 1/4 teaspoon
warm water 140g / 1/2 cup+1 tablespoon
oil 27g / 2 tablespoon
beef fillings:
ground beef 625g
five-spice powder 2g / 1/2 teaspoon
Sichuan peppercorn powder 2g / 1/2 teaspoon
white pepper powder 2g / 1/2 teaspoon
regular soy sauce 30g / 2 tablespoons
salt 8g / 1 teaspoon
ginger 10g / 1teaspoon
green onions 80g / 1 cup
warm water 125g / 1/2 cup

我愛小高姐~ 我把牛肉換成豬肉,還有沒有加花椒粉因為買不到。 照食譜加水比影片黏,但我也沒多加粉,就包的時候用點手粉。 一點心得: 如果一次做很多,包好餡壓扁前用烘焙紙墊著,壓好就可以直接提起烘焙紙疊起來冷凍囉,要煎的時候就直接拿起烘焙紙翻到鍋裡,也不怕黏手破皮。

@@mirantilin 如果第二天早上吃的话,晚上拿出来放冷藏就行。如果直接冷冻室拿出来煎的话,时间稍微久一丢丢就行,火别太大,不然面饼焦黄了肉没熟。

@@safslut01 you'd eat 'garbage' too if your country had a severe meat shortage. Some of these recipes were born out of necessity but evolved into what they are today. Cuban grapefruit steaks are delicious for example, packed with nutrition and vitamin C but we would normally discard grapefruit peels otherwise

Helpful tips for first timers:
1. If you can’t find Sichuan peppercorn, use half cardamom half black pepper. The flavor is similar.
2. Make half the recipe. 10 is a LOT. It takes over one and a half hours just to fry them if you do them one at a time. If you do make the full recipe, put the oven on low to keep warm.
3. Don’t fret too much about the thickness of the dough. It may be off balance but the resulting pie will come out ok.

There are also latino meat pies called empanadas. There are Mexican ones and Central American kind. They are all yummy in my opinion! 👌 I would love to try this asian style dough.

Watching this gave me countless alternatives for this recipe, you can make it with lamb, pork, chicken, duck, sausages, eggs, veggies, chocolates/sweets...
but you need to try out different kinds of side ingredients and ratio to bring out the best taste of different meat.

I just made this, it worked great! I improvised a vegetarian filling for it, though, but it was still delicious. And the dough was so stretchy, really fun to make.

I tried it and even though i don't have the dough molding down like she does these still came out Delicious!! I seasoned the ground beef with my own seasoning though, i did add the poatatoes and green onions as she did, wonderful tasty recipe, will do again definitely! Thank you for this delicious recipe!

Oh, I tried! Total unequivocal failure! Oil and flour all over the place. It took me nearly an hour to clean up. I consider myself an experienced cook but this was too much!

@@TheChewyleaf Thank you for asking. I salvaged it somehow and ended up with a huge amount of doughy meat. They are sort of like meat pancakes, which is ok. Just not at all what she made.
@@sfreddy Ah that's a shame, sounds like it tasted nice anyway though! I tried the recipe yesterday and it actually went surprisingly well. I don't know if this helps, but I cut the recipe to 40% of the total, so it only made 4 pancakes. This made my life a lot easier as then I quartered the dough and the mince to figure out the right proportions, or I would have found it very hard splitting it into 10.

This became one of my favourite dishes, not only because it is delicious, but it can be freezed and cooked and it is as tasty as ever. Great for the days I came back from work and I only need a pan with oil to have a good meal.

@@longbutt51 I freeze it raw. It doesn't affect the cooked product, the potatoes do their job even after freezing.

This recipe simply works, great method! We did exactly the same as she taught, the pancake itself is very thin while the beef filling is chunky and not over-cooked that could have become very hard in texture. This is our most successful attempt to make such kind Chinese style meat-filling pancake. I just have to write in both Chinese and English to say thank you very much!
