Delicious Chicken Quarters on the Weber Grill Using Uncle Steve’s Shake and Jealous Devil Charcoal

  • Delicious easy to make chicken quarters using some Uncle Steve's Shake. Also, new to me Jealous Devil Lump charcoal. Sprayed with duck fat prior to applying the rub on the chicken quaters. 1st time doing chicken this way. Cooked indirect took about 30-40 minutes. Chicken temp varied 175-185. Easy cook. Chicken on the grill is always delicious. Think I'll go back to spraying during the cook. Skin wasn't as crisp on the chicken as I normally like. Rub was really good. I highly recommend it.     Chicken looked fantastic! I have all of Uncle Steve's shakes, not a bad one in the bunch. I try to cook my chicken with my grill between 350° to 400°. Crispy skin every time. Great video 👍👍

      Thanks brother. Yeah I love doing chicken. I never have a problem really with skin. Idk if it’s the new charcoal (don’t think so) or that I sprayed before seasoning. Normally if I do us some kind of spray I’ll do it during the cook. Definitely doing some videos in the future to put this to bed. Thanks for watching 👊🏻✌🏻

      Hey Jason! It’s good. Not a must have though. Never sprayed prior to cooking. Always middle of cook for me. Didn’t really work that well this cook. I don’t always use a spray or butter. They do help though. Thanks for watching.👊🏻✌🏻

    Looks like it turned out well man. Although of times with the skin it a matter of cranking the heat at the end of the cook, or cooking direct at the beginning then going indirect to finish the cook

      Hey brother thanks for stopping by. I normally use one chimney full of coal and cook indirect and I’m satisfied with the skin. Sometimes I may spray with oil. Wasn’t happy with it this time as I sprayed before cook. Idk

    Awesome chicken. Also great that you can find JD charcoal at Home Depot now? I think the skin looked too moist when you put the rub on. Moisture is the enemy of crispy skin. I had great success air drying skin in fridge overnight or doing a light sear at beginning of cook to dry anything out before putting in indirect side. But yes, you are right…Spraying duck fat during cook can help too!

    I use duck fat also, worst kept chicken secret! I have issues with crispy skin also. Just needs more patience and heat. And I'm low on patience.

      Hey Will! You know normally I don’t. I don’t always get the crispiest but normally I’m happy. I did two things different. The charcoal which is as my first time using. Idk and used duck fat prior to the cook. Normally I’ll spray during and not always duck fat. Idk bro

    Everyone keeps using this uncle steves stuff and I had never heard of it before. Guess I should look into it a little bit. I think your chicken looks my tasty. Even though, I'm not a huge fan of dark meat. But I think I could go ahead and gnaw on a leg lol.
