- A brigadiero is a Brazilian truffle make with chocolate, cream and condensed milk. In this version, I made this a cake. This is a moist chocolate cake with a wonderful creamy brigadiero icing.

True. I was her student in the early 90's trust me Maam Rose is really good. All the recipes she shared walang palpak. That's why if other Chef on YT has similar recipe with her I go for her recipe because she is true to her words. So encourage your friends to watch her YT channel.

So intensely chocolate. If even 3/4 cup of cocoa and some coffee can already produce a remarkable cake, how much more this recipe. Thank you for an easy layered recipe. why po nakaka affect ba yung direct ibake sa tin can?
I don't like baking them directly in tin cans because of the paint. I believe that the paint has a negative reaction when heated. This is just my opinion. Thank you for watching!
If the can is unpainted, it is okay. But it is a different story if the can is painted. I believe that the paint releases toxic fumes when heated. This is just my opinion.

can i ask the reason why you prefer not to bake directly in the tin can? Also do u have to chill first the ganache before spreading it?
I believe that the paint has a negative reaction when heated. This is just my opinion. Do not chill the ganache before spreading. Just cool it slightly until it thickens a bit. It should be thick but pourable.

390 - 400 grams or about 1 1/2 cups.
Silly question, because of the custard layer, does this need to be refrigerated after everything sets? 🤔
Yes you need to refrigerate because of the eggs and milk in the custard.

Yes. It is a moist chocolate cake. If you already poured the ganache on the cake, you can try to tap the cake to burst the bubbles.

Yes you can. If you wrap it well, you can freeze these for 2 weeks.

Have you tried baking this cake already? If not, please try to do so before adjusting the sugar level. If you adjust the sugar, expect the cake to be a bit drier.

3 days in the ref. A month in the freezer.
Also, how long should the cake rest in the pan before turning out to cool? I did 10 minutes for the first pan and 15 minutes for the second pan. They both stuck a little. 😭
Did you put paper liner in the baking pans? They should not stick. I cool the cakes in the baking pans before removing them.
@@ChefRoseofCaroandMarieCebu I did not as I never do but I will for this cake in the future. So should the cake cool completely in the pan? Like an hour or two?
No need to cool it completely before removing from the pan BUT I usually do because I have other things to do in the meantime. I always multi tasks :) Just make sure you line the bottom of your baking pan.

Hello Chef Rose thank you for all your wonderful videos. I am a filipino OFW from Japan. I have a shoebox oven. Maka affect ba ang size ng oven sa time of baking since maliit lang and you baked yours sa real old fashioned big oven. Dapat bang Hinano ko ang temperature and lessen time of baking and lower temperature?
If you have a small oven, you might need to reduce the heat by 25degF and I expect the baking time is shorter. I do not have actual experience with small ovens since I have always worked with big ovens. My advice to you is based on experience with my students. Hope I was able to help.

I suggest you to buy oven thermometer. 350F reading for big oven is the same as 350F reading for small oven when measured with the oven thermometer.

One recipe fills 2, 9"x9"x2" square pans so 8"x8" might be too small.

Depends on your costing because we do not have uniform prices for ingredients and containers.
Hi Chef. If I use an 8 inch tin..how many will this recipe yield?
Maybe 2 tin cans for 8”. I am not very sure since I made this recipe for 6” tin cans.

I do not do costing because youtube tutorials are not dated so costing when we shoot the video and 6 months from now will not be the same. Prices are constantly changing and it also depends where you are located. Best way is to do your own costing.
