- Today we're making chicken parm with vodka sauce. Well seasoned crispy chicken cutlets are baked with vodka sauce, mozzarella, and a sprinkle of Pecorino. Use Parmigiano if you want but I think Pecorino is better. Enjoy!

Keep doing what you're doing! One tip for future videos, maybe add some text on the screen with your ingredients (with metric / imperials) - other than that, keep it up! For views, maybe alternate and do series (eg. vegetarian, or regional Italian styles). All the best for you.

I totally agree with your comment about cooking not being the same as baking. Exact measurements are important in baking, but to be a good cook, you have to develop instincts over time, and taste what you are cooking constantly, and make adjustments based on your acquired instincts. Being a good cook is a journey, not a destination. A good cook NEVER stops learning.
This channel is so good, one of the few cooking channels where the recipes don't feel too intimidating to have a go at after a days work when my brain is fried lol.
Many cooking channels are competing with each other to make things overly complicated. I think there is a couple of reasons for this. They want complements from pro chefs/peers and maybe they think simple food doesn't offer them enough of a challenge. I try to put the viewer first on this channel and cater to what they would actually attempt to make with the limited time we all have. I try to do that in the simplest way possible.
It is one of the best stovetop dishes channels. I love cooking and I'm a die hard grilling guy .. I'm sure you already know but malcolm on (How To Bbq Right) is the go to if you want to grill some amazing meals.. he's the goat imo.

Agreed. This kind of stuff is what I generally cook because I rarely want to dirty every pan, utensil, and dish in my kitchen and spend 8 hours making a meal and cleaning up. If I want fancy, there are great restaurants nearby, so unless it’s a special occasion, this is what I’m making in my home.

This is one of the truest statements anyone desiring to cook well needs to understand, and why a gold YT play button is on the horizon. Learning how to cook instead of learning how to measure is the foundation of your channel, regardless of the recipe, whether Italian or more American leaning. Folks are coming here to learn how to actually cook, and cook with using what they have and can get. Baking is more precise so get a scale, but good cooking is all about the groove and feel. In never saw my mom or grandma sweat the details or have anyone dislike whatever they made.
Just like all great musicians occasionally hit bad notes when performing, great cooks also have their moments. What makes both great is how they handle and recover from it, which comes from doing either of them a lot. It's called experience, and our confidence grows to becomes a place where we realize that there isn't much we can do wrong that would prevent us from still making something others will want to consume.

This time 1000x. In addition, NOT measuring encourages experimentation. It encourages you to taste and adjust as you go. It encourages you to take note of your outcomes and make adjustments next time. Eventually those types of learnings allow you to make up your own recipes, or modify other recipes you might find in successful ways.
Also measurements arent as exact as people believe, ingredients change a lot
@@zhan04144 Right! I've seen recipe blogs where commenters say "this was bland, never making it again," and I always wonder, don't they taste as they cook? It's so easy to fix if it's bland, or if you don't like one ingredient, leave it out or try something else! Experiment!

I don't know, your videos really have a different aspect to it much different from other channels.
I guess if I'm going to have to say something, it'd be that you really seem genuine. Genuine about food, genuine about teaching people, and genuine with the family.
I don't feel like you're "selling" me anything.
Oh and lastly of course, it's refreshing to see you bond with your kid. And it's not the kind that "exploits" their kinds on youtube... and is a genuine connection for your guys' love of food.

I hate when channels get that same format when they get larger. loud voices, stupid paid promos. It’s nice just seeing a high quality production in a guys home where he is just sharing recipes his family enjoys.

4:30 - exact measurements were my biggest roadblock to becoming an excellent home chef. One day I stopped using measuring spoons and cups for everything except for baking, and I leveled up my cooking game almost immediately. It helps you improve in more ways than one might think - makes it much more natural to pick a bunch of ingredientsa and just "improvise".

Dude, as i think our host here would agree, take the ‘exact measurements’ and throw (most) of them in the trash. Nine times outa ten, it is all in the feel; the ‘taste as you go’; and the more you do this, the more it becomes apparent!!
As my (get this - ) Italian great grandad’s father (for real) used to say, long ago, before I was even born, (though it is ‘family folklore’), if people were measuring ingredients in the kitchen with too much accuracy: “attenti, non misurate troppo preciso, che i vigili ti danno la multa!!!” Meaning: “watch out guys, don’t measure things To precisely; or the cops will come and give you a ticket!!!”. My dad’s told me this like, one million times……
Totally agree ! Is there anything sillier than dictating. “ 1/4 tsp dried basil, 1/2 tsp dried oregano” , especially in Mediterranean cooking ????

This sauce is so versatile and a good change from the usual Italian sauces. It was superb on the chicken parmigiana. I also made this sauce with fresh shrimps as suggested by Jim which was fabulous over pasta. Always looking for different ways to use shrimp in recipes. The silky texture is so delicious. I really enjoyed dipping toasted Italian bread in the sauce too. Thanks Jim for this different delicious versatile sauce! 5⭐’s

Whenever my Granny made chicken parm she always mixed up the leftover breadcrumbs with the egg, shaped them into thin patties, and fried those. We dipped them in marinara sauce and it was so good!
There are 3 meals you can guarantee on being served on an Australian pub menu; Steak & chips, Fish & chips and the humble Chicken Palmy & chips. But your Palmy definitely looks better than anything an aussie pub has dished up.

Hey there. Just thought I would swing by and say: I made this yesterday in my tiny kitchen, and it tasted amazing. I've never made Chicken Parm before - it's not really a thing here in Denmark where I live - and it was great fun to make. I even lacked some ingredients but that didn't stop me. Your channel taught me to just have fun with it and the dish still tasted great despite having to use red wine instead of white, and having no cream either.
So thank you very much once again for sharing these videos. It inspires me to cook and has already given me so much great food I would otherwise never make. Cheers!

Rather than ponding out the chicken cutlets in zip lock bags, you can use wax paper! Cheaper and I have been using it for years!

As a Brit, I've not often come across Vodka sauce. I made this sauce and used the technique for the Chicken Parm - and I was a hero in the household. Everyone loved it!

Hi Jim...I'm here in Scotland and chicken parm isn't something we often see in restaurants... or on any british tv cooking shows. To be honest, I'd only hear of it in the movies and stuff... Anyway, I followed your recipe, and I was excited all day to make this. Omg...it didn't disappoint...it was AMAZING! And I was so pleased because it looked just like yours....the only downside... My kitchen looked like a bomb had gone off. I somehow managed to create the most washing up ever... and I couldn't see a spot of worktop that wasn't covered in some sort of food stuff. Now im systematically going to go through your videos and get in the kitchen! Thanks for making it look easy ..I'm your new biggest fan 😂
Here’s a tip from my 80 year old Neapolitan friend regarding chicken cutlets. Put your cheese in the beaten eggs. It helps it bloom. Small changes make a big difference.

Another good one Jim - I put parmesan in the breadcrumbs (along with a pinch of cayenne) and occasionally use Munster cheese - it melts up like mozzarella but has a little more flavor. Definitely agree with your advice - try things, experiment and don’t worry about measuring things. If someone is starting out and is still nervous about “eyeballing” spices etc, drop a tablespoon of sugar into the palm of your hand and cup it. Then you can measure your spices the same way (and use one third of the amount if you want a teaspoon instead of a tablespoon).
I watch your videos for the menu ideas and ease of ingredients , but listen for the stress free approach to completing a delicious dish...I usually watch a few in a row and always find a "new" approach to my standard methods...like adding onions and cheese to the marinate for your chicken and potatoes...well deserved you tube recognition

4:35 i agree 100%. with baking, you need to be specific. that's why i love cooking. you can literally just eyeball everything and have it come out the same way every time. there's some things i do measure, but they're usually just starting points.

You are just amazing. I started watching your videos while I was undergoing treatment for throat cancer and found your New York round video. I ordered the steel and did the whole 9 yards seasoning it etc. And even though I can’t eat yet from my treatment, I have been making pizza and chicken parm for my family and have been loving watching them enjoy it. i taught my great nephew my chicken parm recipe. the family was stunned (in a good way). he was 20 and still living in his grandparent’s home. i am West Coast bred. San Francisco and the peninsula is Italian and Asian. My favorite cuisines are Italian/Greek/Japanese/Thai/chinese. in that order. i prefer schewhan and Thai from the Asian cuisines!

I love your programs. I am just a home cook, but I love it. Something I picked up along the way was to add the Parmesan cheese (Regianno) to the bread crumb mixture. Also, something I do with extra flour and breadcrumbs (if there is enough to bother with) is to put each in a labeled/dated freezer bag and put it in the freezer. We have a stand-alone freezer that is kept colder than normal freezer units in a refrigerator. We do didn’t have a lot of money but that was was worth every penny and saved us a lot of money in but long run.
The rest of my recipe is pretty normal except I am gluten-intolerant. Thankfully, the GF products have improved since I was diagnosed. So my flour is gluten free. My pasta is gluten free. My bread crumbs are gluten free Usually I make my own.
By the way, I love that your son is so honest. I love the fact he feels comfortable stating he found prosciutto too salty for his tastes. I adore Mediterranean foods. But I find Greek food amazing and refreshing. . Thank you again!
Honestly probably one of the best cooking channels there is. The videos all feel very relaxed, very homey, and all the recipes actually seem achievable. A lot of other channels have recipes that need niche ingredients or are overly complicated. Keep up the good work!
