Stifado is a great dish to slow cook and I've included a few shortcuts to make it easier for a busy family household. Stifado roughly translates as a stew with lots of onions! If you want to go really native you can replace the beef with rabbit or even octopus but beef has always been a very popular version (and cheap!).
Tip 1: If you want to use more beef simply increase the amount of onions by the same - the meat and onions should be of equal portions.
Tip 2: If you haven't got time to peel all the baby onions you can replace with the same quantity of sliced white onions (although traditionally baby onions are best)!
Beef Stifado Recipe:
Ingredients (serves 4)
■extra virgin olive oil
■500g stewing beef (chopped into 2inch square pieces give or take)
■500g baby onions
■sugar (just a pinch)
■6 new potatoes (about a handful), halved
■130g chopped tomatoes (1/3 of a tin)
■1 tbsp tomato puree, heaped
■1 tbsp ground cumin
■½ tbsp cinnamon, ground
■3 cinnamon sticks (about 2 inches long)
■nutmeg (a few grates), grated
■3 bay leaves
■garlic (3x cloves), sliced
■12 black peppercorns (whole)
■5 whole cloves
■60ml red wine vinegar
■90ml red wine
■500ml stock (or water)
■fresh parsley (to garnish), chopped
Method:
1.Preheat oven to 170'C (if using) or slow cooker to LOW
2.In a hot pan add a drizzle of extra virgin olive oil and sear the stewing beef to give some colour - do it in batches so not to overcrowd the pan
3.Once browned set aside
4.In the same pan add enough oil to cover the base of the pan (part of this dish is about enjoying the flavour of the extra virgin olive oil so don't hold back!) and add your onions, a small pinch of sugar and fry until the onions start to caramelise
5.Then add all the dry ingredients (except the parsley) and fry for a minute before adding the vinegar and wine
6.Bring to the boil, then add your beef and any juices back into the pan, pour in enough stock to just cover the ingredients
7.Pop in the oven for 3 hours or slow cooker for 6 hours (or as instructed for stewing steak by the manufacturer)
8.Once cooked, remove from the oven, add the chopped parsley, season and serve!
9.Goes well with rice or if you've added lots of new potatoes just put it straight in a bowl

Looks good, I'm going to give this a shot with less onions. Ever since Roditys in greek town shut down I lost my favorite braised beef. this looks fairly close to what i remember

Simple lol I think its complex alot of different ingredients comes down to cost..and I think this is expensive thats probly why its so good lots and lots of ingredients, no way its simple, 3 ingredients is simple mash potatoes..butter..cream. This is Beef, eine, tomatoes, cinnemon, chicken stock, onion, cloves, bay leaves, chopped tomato, so tbh To say its simples an Insult mate 🤣

I see you have omitted Oregano is this intentional? Or just a regional variation? I struggle to find a decent Greek wine so I used a ample bodied Italian Red. THANKS great video Theo!

I so want to cook this particular Stifado and I think he presents it brilliantly, but I need a written recipe as well, as I'm not going to watch a video whilst I cook or just remember those ingredients so I'm going to have to use another recipe and hope I can recall at least some of those spices. Being widowed at the age of 80, learning to cook the dishes that my beautiful wife and I ate in the various countries we visited is one of the few things that make life worth living.

Just wondering when you say the cooking temperature if that's on a conventional oven or a fan oven ?

Janet S traditionally a stifado does use a lot of oil, but you need to use good quality extra virgin olive oil and it’ll taste gorgeous and does form part of the dish both in terms of taste and texture, and surprisingly not ‘oily’. Or, deviate and just use how much you want! After all - it’s all about personal preference and there’s no right or wrong!

I am most certainly going to try your version of this Stifado. However, I was wondering. Why would you use chicken stock for a beef dish? Wouldn't it make more sense to use beef stock? I was also wondering why three hrs in the oven? another video I watched, a man cooked his Stifado for an hr and a half. I think 3 hrs is a bit long. Thanks for sharing.
HMTWORN thanks for the comment. I use chicken stock as I prefer it to be slightly lighter in flavour, letting not just the beef shine, but the cinnamom and baby onions. I use beef stock for a proper beef stew; rich and hearty. Whereas for me, the best stifado is a real balance of the other ingredients. If you want to use beef stock I would use a slightly diluted version as it can be too powerful. Equally, in terms of the timing, this is affected by the cut of meat. Personally I like stewing steak or beef shin for a good 3 hours on a low heat. I'm sure there are a hundred people cooking it for different durations. The general rule of thumb is the tougher the cut the longer and lower you cook it. But hey - this is just how I do it which gives me great results everytime. If you're cooking it - try it how you want! Good luck!

Can this recipe be cooked and then frozen?
Yes it can! Just be aware that when you reheat it, you need to defrost fully and heat it up gently as you'll find the meat does start to break down more.. Good luck!

My meat always gets very chewy and dry. I have tried making this dish 3 or 4 times now with no luck. Any tips? I always sear the meat first (never crowd the pan), but it seems to me like the meat loses a lot of fluids when I sear it...
Hey TDTesting, I think we can fix this. 1. Make sure you are using braising steak (nothing lean like rump, the meat needs to be a stewing or braising cut).
2. When you sear the meat, do it on a high heat but just for a small time, you literally just want a little colour.
3. When you actually cool the dish make sure the temperature isn't too high - this is a low and slow cook.
4. Finally, and the most important - when you remove the dish from the oven, leave the lid on and let it rest for 15 minutes. This will all the meat to relax and reabsorb all those lovely juices. If you don't rest it the meat will be dry and tough..
