In my opinion, tofu and avocado is always the way to go! I personally would add some form of Yukon, Gold potato, but that’s just me ha ha

I like some "everything bagel" type spice mix on avocado toast.
I love the Barilla plant based high protein pasta. I like the angel hair since it cooks quickly. And it's less expensive than the "health food" store brands. (It does contain some wheat, and therefore gluten.)
Love these!! I have been looking for more high protein vegan foods. I have issues with my blood sugar/PCOS so I have been trying to get more higher protein and fat content vegan meals in lately.

I have always had an issue getting protein with my food disorder and with situation i am in it has gotten worse. This video gave me some really good ideas ans places to start. I am still somewhat newly vegan I guess you might say. Been vegetarian sense I my early 20s. Right now I can't be up much so this helps with your simple recipes

Great video as always❤️ curious to know what you guys think of aquafaba scrambled eggs! Here is the recipe is you guys want to try it out 🥰
Whisk together ½ cup chickpea flour, ½ cup aquafaba (save the chickpeas in the fridge for another meal), ¼ cup filtered water, 1 tablespoon nutritional yeast, ½ teaspoon sweet paprika, ½ teaspoon turmeric, ¼ teaspoon kala namak (black salt), and a few grinds of fresh black pepper. Set the mixture aside and let it thicken for 10 minutes.
Use this time to saute any vegetables you’d like in your scramble: peppers, onions, mushrooms, tomatoes, spinach, etc. Scoop the vegetables out of the pan and keep aside until you’re ready to serve.
Heat a bit of oil in a skillet over medium heat. Pour in the chickpea flour mixture and let it sit in the pan undisturbed for about 1 minute to set. Use a nonstick spatula to begin scrambling the mixture as you would with beaten eggs. Continue to scramble every 2 minutes or so (not constantly, or the mixture will form really small bits) until it no longer looks wet. If using, stir in the sauteed vegetables.
Serve the scramble solo or with a slice of two of toast :)

The linked recipes don't have protein amounts listed. The second recipe has about 12g of protein when I calculated, how many grams per serving are you considering high protein for a meal? (Coming from a fellow vegan who loves your content, just curious!)
Based on our calculations the quinoa salad has an estimated 15-17g per serving. For a salad, I think it’s on the higher end, but I understand that opinions may differ. The amount of protein someone needs is all circumstantial, and I wanted to do my best to make each meal well-rounded. If you’re someone who is looking some extra protein, I’d recommend adding extra beans or tofu to it to make it a bit more substantial. We appreciate your support and thank you for watching 🙏🏼

Protein isn’t that important when training for a marathon. You should be focusing more on your carbs, they’re the most important with this goal in mind. Good luck
I’m focused on eating a well balanced diet. From the research I’ve done, higher protein meals will help with muscle recovery. I am also strength training in conjunction with the endurance aspect, so I’m doing my best to check all the boxes. Thank you! 🙏🏼
@@Sweetsimplevegan Protein for muscle recovery, carbs to fill up glycogen stores. Carbs are more directly relevant to the marathon but both are important and it's good that you're balanced.
When I eat pasta to carbo-load the night before a run I like to eat wheat since it digests slowly, is more nutritious than white, and gives you energy for longer. I find the timing matters a bit. The ratio tips more toward simple carbs than protein in the hours before a run since protein can take a while longer to digest, something like a Clif bar that has a small amount of protein but is mostly carbs, while increasing protein in the hour or two after a run satiates me and helps with muscle recovery. At the end of the day no two bodies are identical so you practice it and see what works for you.
The quinoa salad looks really good and you might have just motivated me to rotate it in!
whoa goodluck with your knee and joints when you're older without animal protein. I was vegan for 2 yrs and my knee was already broken from working out.
I haven’t eaten meat in over 13 years, I think I’ll be good! Some of the best ultra runners in the world are long term vegans.
