White Mutton Yakhni Pulao | Easy & Delicious Mutton Yakhni Pulao | ‪@Nishooskitchen‬
Mutton Pulao is a fragrant and flavorful rice dish that combines tender pieces of mutton with aromatic basmati rice, simmered together in a blend of spices and broth. A popular dish in South Asian cuisine, Mutton Pulao is known for its delicate balance of spices and rich taste. Unlike biryani, which is more robust and layered with stronger spices, pulao offers a subtler, yet equally satisfying experience, making it a favorite for both special occasions and everyday meals. The slow cooking process allows the mutton to infuse the rice with its savory juices, creating a dish that is both comforting and indulgent.
INGREDIENTS:
For the Yakhni (Broth):
400g mutton
5-6 cups water
1 large onion, roughly chopped
4-5 garlic cloves
2-3 bay leaf
4-5 cloves
1 cinnamon stick
1 tsp black peppercorns
1 tsp cumin seeds
Salt to taste
For the Pulao:
2 cups basmati Rice (500g) (soaked for 30 minutes)
1-2 large onion, thinly sliced
2-3 green chilies (optional)
1 tsp cumin seeds
1 bay leaf
2-3 cloves
2-3 green cardamoms
1 black cardamom
1 cinnamon stick
1 tsp ginger-garlic paste
4-5 tbsp ghee or oil
Salt to taste
Fresh coriander and mint leaves for garnish
INSTRUCTIONS :
1. Prepare the Yakhni:
In a pressure cooker or large pot, add the Mutton, onion, garlic, bay leaf, clove, cinnamon stick, black peppercorns, cumin seeds, salt and water
Bring to a boil, then cover the lid and give a whistle for 15-20 minutes.
Strain the broth, reserving the mutton and the liquid separately. Discard the spices and onion.
2. Prepare the Pulao:
In a pressure cooker , heat the ghee or oil.
Add the sliced onions and fry until golden brown.
Add The ginger-garlic paste and green chilies (if using). Cook for a few minutes.
Add the reserved mutton pieces and sauté for a few minutes.
Measure and add the reserved yakhni (broth). You will need 4 cups of broth for 2 cups of rice. If the broth is less, add water to make up the difference.
Add the soaked rice
Add salt to taste and bring the mixture to a boil.
cover the lid and give a whistle for 4-5 minutes
3. Garnish and Serve:
Once the pulao is cooked, fluff the rice with a fork.
Garnish with fresh coriander and mint leaves.
Serve hot with raita or a side salad.
