Channa Pulao is a delightful and nutritious dish that blends aromatic basmati rice with tender chickpeas, infused with a medley of spices. This one-pot meal is not only easy to prepare but also rich in flavor and protein, making it a perfect choice for a wholesome lunch or dinner. Whether you're looking for a quick weekday meal or a special dish to impress guests, Channa Pulao offers a satisfying and delicious option that's sure to please everyone's palate.
INGREDIENTS :
500g basmati rice
1 cup cooked chickpeas (canned or boiled)
1 large onion, thinly sliced
2 tomatoes, chopped or sliced
1 green chili, chopped (optional)
1 tbs ginger-garlic paste
1/2 cup of oil or ghee
1 tbs cumin seeds
2-3 cloves
1 cinnamon stick
1/2 tbs turmeric powder
1 tbs cumin powder
1 tbs coriander powder
Salt to taste
Fresh coriander leaves for garnish (optional)
2-3 cups water or according to the rice quantity
DIRECTIONS :
1. Prepare the Rice:
Rinse the basmati rice thoroughly under cold water until the water runs clear. Soak the rice in water for about 20-30 minutes, then drain.
2. Cook the Spices:
In a large pan, heat oil or ghee over medium heat. Add cumin seeds, cloves, cardamom pods, and cinnamon stick. Sauté until fragrant, about 1-2 minutes.
3. Sauté Aromatics:
Add sliced onions and sauté until Light brown. Then add the ginger-garlic paste and cooking for another 1-2 minutes until the raw smell disappears. Then add a little water and mix it well.
4. Add Tomatoes and Spices:
Stir in the chopped tomatoes and cook until they soften and break down. Add turmeric powder, cumin powder, and coriander powder. Mix well and cook for a few more minutes until the spices are well combined with the tomato mixture.
5. Combine Rice and Chickpeas:
Add the soaked and drained rice to the pan, mixing gently to coat the rice with the spice mixture. Add the cooked chickpeas and mix well.
6. Cook the Pulao:
Pour in 2 cups of water and add salt to taste. Stir well and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 10-15-minutes, or until the rice is fully cooked and the water is absorbed.
7. Final Touch:
Once cooked, fluff the rice gently with a fork. Garnish with fresh coriander leaves.
8. Serve:
Serve hot with raita, yogurt, or a side salad.
