      Thanks! I learned the hard way to mix it lightly. I’ve found that it’s mixed enough when it looks like it’s not mixed enough 😜

    You had me at bacon fat. Do you think this would work with gluten free flour?

      I think it would with the right stabilizers/gums. Gluten free baking is out of my expertise.
