I used the black beauty eggplant..I live in Florida so its not from Guyana..When you are buying try getting the light ones they usually get less seeds and the head should be green so you know you are getting fresh..

Rub a touch of oil and roast under the broiler for about 25 mins in the oven.....mess free....fast and easy😁
The tomatoes could be acid and needs to add a tbsp of sugar.
