Fantastic!! You did really well in getting out most of the flesh. I agree with you that a few pieces of the charred skin is totally fine. 🙂 I rub a little oil on the outside of the bhaigan before roasting it. And finish with sliced onions and pepper topped with some smoking hot oil (chunkay).
some thinly sliced onion at the end finished with some vey hot oil over it really makes a difference to this dish. One of my absolute favorites. Looking out for the flat bread recipe

I understand yuh roasted garlic technique eh, but is to chunkay a few cloves and incorporate it at the very end - dat too does give yuh de roasted flavour yuh looking for. I do the roasting of de baigan wit garlic cloves inserted into slits in the skin in tandem with de chunkay, so is around a whole head of garlic i usin, too. Some sliced raw onion in the final mix for a little extra tang really intensifies de flavour. Also, Baidawi, is to sannay eh, wit sada - come nah man, dem kinna pocket sandwich ting eh fuh ting like baigan choka!😳
The BESS!!. I also like to roast both the pepper and garlic in the baigan itself. To get the flesh I slit the entire length and use a spoon to scoop out the flesh. Whenever we use the grill, I roast baigan and garlic over the coals. Mmhmm can't get it better😄... Nice Monday evening meal with a little avocado or fry plantain at the side👍👍👍

baigan is not a favourite of mine ...tastes like nothing to me (like avocado) and the texture is a turn off. I'd try this but I don't have a gas stove so that's my excuse and I'm sticking to it! lol

We do a similar thing but we add red chilis, mustard oil, and onions.

Hm, the best thing would be to use the broiler in your oven to try to get the roasted effect.
