  • This Vegetable Samosa Recipe is one that has been handed down generations to my sister-in-law and she has been kind enough to share it with us all. Once you eat these samosa, you will not want to eat any others....they are that tasty!
    The video may seem long, but it has some important steps included to make the best samosa ever, so watch until the end. If you want to learn how to make Samosa for beginners, you're on the right video tutorial!
    And to make life a little easier, we use ready made pastry as it turns out very crispy when fried!

    VEGETABLE SAMOSA INGREDIENTS
    5oz Mixed Vegetables - Peas, Corn, Carrots, Beans
    3oz Frozen Corn
    8oz Frozen Peas
    1 lb Boiled Potatoes (Red Skinned)
    4 oz Small Onion Finely Chopped
    5 Tbspn Finely Chopped Coriander
    2 Tbspn Oil
    2 Tbspn Lemon Juice
    ¼ tspn Whole Cumin Seeds
    1 ½ tspn Salt
    ½tspn Red Chili Powder
    1 tspn Garam Masala
    ¼ tspn Turmeric
    2 tspn Ginger-Garlic-Chili Paste
    ½ tspn Sugar (or to taste)
    For the Paste:
    ¼ Cup Plain Flour
    4 Tbspn Water
    And 60 - 80 Samosa Pastry (as we will use double pastry)

    I made this and Sheera for guru Purnima this week.
    It is not easy to cook Soya mince but using your guidelines, your flavors are subtle and turned out delicious. I felt so proud of myself but thanks to you.

    MUCH rather prefer YOUR Pastry Folding Method than Poornima's - it's so much more neater, tidier, more symmetrical, as well as easier. GREAT SIMPLE RECIPE.

      @@MilhaanHome I do have some cilantro in my garden. I can pick some of that today. And I do not live anywhere near an oriental store. I would have to drive over an hour, it's okay I saw comment where they used puff pastry. We have 1-ton rollers so I think I will use those. Thank you for responding.

    I have a question, for the samosa wrapper can I use just 1 wrapper per samosa? I have the long strip wrapper. Great recipe the filling came out taste amazing thank you

      You can definitely use one wrapper instead of two but they come out crispier with two wrappers. Try both and see which you prefer. Enjoy 😉

    Hi, it looks delicious. Why do you put raw onions at last? Wont it tasty very oniony? Does it stay crunchy? Ive seen a lot of videos which do that but why at the end? And actually never made it like that. Perhaps I should..😊

      Onions are added to the end to add a different flavour as they aren’t caramelised and, therefore not as sweet. Yes, definitely try this technique as it’s a game changer! The meat samosas on this Channel are great too!!

    When peeling something hot put them under running cold water or fill a bowl full of cold water and peel them in it.

      When making potato or macaroni salad I often put the bowl of hot potatoes in the freezer for about 5 mins

    These look amazing 🤩! I'm confused about the coriander. I bought ground, but I don't think it's the same flavor as cilantro. Which do I use?

      Aha! Let me help you with this: Coriander can be a seed as well as the green leaves that grows from it. In the UK, we call both the seeds and the green leaves Coriander. In the USA, the seed is called Coriander and the leaves are called Cilantro. So I am using the fresh leaves here which are called Cilantro in the USA (or Coriander in the UK). I hope that helps!

      Thankyou. In New Zealand we only find coriander fresh rather infrequently. Good to know we can use the seeds!!! Lol I'm a 58 yr old chef who didn't know the seeds were called coriander! 🤦🏻‍♀️♥️

      From south india .samosa itself originates from middle east

      Baking isn’t a good idea but you can air fry them after coating them with a little oil. Fried is best though!

      Hi Alyhah! Great question. No, there is no need to boil them first as they will cook on the stove when you make the mix and when you fry them.

      It's just a mixture of plain flour and water made into a paste. You can adjust the thickness of the paste to make it stick better...the thicker, the stickier! I hope that helps!

      The ready-made wraps are spring roll wrappers. These you can find in any oriental or Chinese supermarkets. In the UK, they sell them in some regular supermarkets too, in the international frozen food section. In the USA, most oriental stores will have them. I hope that helps.

    Been wanting to to try and make these for years, just sorting out the ingredients but I'm stuck on "Garlic Powder chili paste? where do I get that from or do I have to make that too :)

      Hi Chris! I think you mean Ginger-Garlic-Chili Paste right? You can buy each ingredient frozen in cubes at your supermarket and then mix it up.       Just buy a small amount of Fresh Ginger, Garlic and Chilies and make this. You can freeze it into cubes for later use too. I'd love to hear back on how you liked your samosas!

      Hi Phil! You can add some curry powder (a blend of spices) if you like, but the garam masala is another blend of spices that goes well in the samosas. Try this filling recipe first. Then if you like, you can add some curry powder to it. Hope that helps!

    I learned 2 ways of dealing with samosa pastry from the neighbours of a sister. They were all from Uganda but some from Gugerati and others from punjabi families. One group dried the circles quickly in a hot, dry frying pan before stacking ready for halving and making cones (pokes in Scotland and parts of N England). These had to be sealed with flour and water paste. The other version weren't dried and were just sealed with water. The kids who taught us always had disagreements on cooking. Plus both groups cooked the diced veg in a little oil or butter. Water wasnt added.

      Yes, there are 2 different versions of samosa pastry. I’ve done the first method as I’m Gujarati. But the spring roll pastry is an easy and good substitute. I’ll do a video on homemade pastry at some point.
      The raw pastry version is Punjabi samosas. I don’t make those 😊

      You can brush them with a little oil and put them in an Air Fryer or hot oven, they come out ok. But fried is best!

      Alynah Khan Not long. An hour should be enough. Defrost in the packaging. And make sure you have a slightly damp cloth to cover the pastry after separating (2 sheets together) so they don’t dry up.

    How long can they stay good in the fridge

      It’s best to fry straight away after folding. Then they should stay good in the fridge for 1-2 days. You can freeze them partially fried, then reheat in the oven or air fryer.

      If you make these using this exact recipe, you can freeze them for about 6 months😊 They will still taste great!
      Before frying them, place them in a microwave on high for about 30 seconds to defrost them a bit. Enjoy 😃

    After adding the chopped onion boiled potatoes coriander n lemon juice to the cooked vegetables do we need to cook it again.... because the onions are still raw? Can we store the stuffing in the fridge for later use?

      You don't need to cook the mixture again after adding the raw ingredients as it'll cook when you fry the samosa. But if you need to store the filling for later use, I wouldn't add the raw ingredients until you are ready to fill the samosa. If you do end up mixing the raw ingredients with the cooked, it's better if you use it within one day. I hope that helps.

    After some time of frying, the crispiness going.. Why?

      You may want to try a different brand of pastry if you are not happy with the one you are using.
      Also, if your oil is too hot, the outside pastry will crisp up and the inside may still be soft, so make sure the oil temperature is correct.
      The samosa should stay crispy for about 30 minutes, or a little longer depending on the type of pastry you are using. You can re-crisp them in a low oven, but be sure to put plenty of paper towels down to absorb the oil. I hope that helps.

      Actually the raw taste of onions is very good in these samosa. And they are not completely raw as they cook a little when frying.

    Authentic veggie somosa I have never found like this. In India you would never get corn and carrots. Simple potato and peas would be all you would get. Keeps the cost down. Should cost next to nothing when done. And spring roll pastry? lol okay

      You can make it as hot as you like! Or you can make Chutney to go with it and make that hot instead. Everyone's heat tolerance is different, so I tend not to add too much chili. But if you like it hot, don't hold back!! ;o)
