1.5 lbs 16/20 shrimp head on
4 salted egg yolks
1 tsp salt
1/2 tsp black pepper
1/3 cup potato starch/corn starch
1 egg
2 tsp sugar
1 small shallot, minced
5 garlic cloves, chopped
2 Thai chili, minced
3 stalks green onions, chopped
2 Tbsp vegetable oil
Oil for frying

SMALLZZZ SMALLZZZ Duck salted eggs they're soaked into salt for months. In this recipe you only used the egg yolks and steam them.
