  • Today we're making one of my favorite easy meals. This Sunday sauce with shredded pork is so flavorful and really simple to make. The best part is you'll have enough leftover sauce for another pound of pasta. I hope you enjoy this pork sauce with pappardelle.

    SUNDAY SAUCE WITH SHREDDED PORK
    Ingredients
    1 pound pasta
    2.5 pounds boneless pork loin
    1 medium onion - diced
    4 ounces pancetta - diced
    2 tablespoons olive oil
3 ounces tomato paste (half of standard can)
3 (28) ounce cans plum tomatoes - hand crushed or blender pulsed
    1 cup dry white wine
    Salt and pepper to taste
Lots of grated Pecorino Romano cheese - for serving
    Instructions
    1. Cut the pork loin into 2 pieces if necessary (it needs to fit in the pot to be seared) and set aside.
    2. Heat a large heavy pot to medium heat and add the olive oil and the pancetta. Cook until the pancetta renders most of its fat (about 8 minutes). Remove the pancetta with a slotted spoon.
    3. Pat the pork dry then season on all sides with salt and pepper then place into the pot and sear until brown on all sides. If using two pieces, sear one at a time. Remove the pork loin and set aside.
    4. Turn heat down to low and add the onions. Cook until soft and translucent (about 5-7 minutes) then add in the tomato paste and cook for 5 minutes longer stirring frequently.
    5. Next add in the wine, turn heat to medium-high, and cook for about 5 minutes to burn off the alcohol and reduce the liquid. Using a wooden spoon scrape all the brown bits off the bottom of the pot.
    6. Add the plum tomatoes into the pot and stir it all together and bring to a simmer. Once simmering add in the pork and cover leaving the lid slightly cracked. Turn down the heat to low and cook until tender (about 5 hours). Make sure to stir every 15-20 minutes to avoid sticking. Alternatively, if using a Dutch oven, cover and cook in the oven at 300f until tender.
    7. Once the pork is fork tender and pretty much falling apart, remove it to a cutting board and chop it up or shred with 2 forks. Return the pork to the pot, mix together, and taste test. Adjust salt and pepper to desired taste and continue to cook the sauce on a very low heat while boiling pasta.
    8. Cook pasta in a large pot of salted water (2 tablespoons kosher salt) until almost al dente. Heat a large clean pan to medium-low heat and once hot, spoon 3 cups of the pork sauce into the pan. Add the almost al dente pasta to the sauce and mix it together and/or flip so that the sauce sticks to the pasta. If the pasta is too dry add a bit more of the sauce and/or a splash of pasta water. Once the pasta is cooked through remove from heat and serve. Extra sauce can be served on the table for anyone who would like more or for bread dipping. Serve with lots of grated Pecorino Romano cheese. Enjoy!
NOTE: Makes enough for 2 pounds of pasta. Save the rest in the fridge for up to 3 days or freeze for up to 3 months.

I made a Julia Child recipe and after two attempts I finally made it more to my taste and with a ton of mushrooms, suddenly everything fit into place and the chicken breast was so tender. Making a dish your own is important especially after figuring out the base recipe.

I decided to try this for the whole family when we got together for Christmas this year. I'm pretty amateur at the cooking thing but our Mother passed this year and nobody else seemed to take the lead on making a nice dinner? I simply went to the local market, picked up all the ingredients in 15 minutes and gave myself 6 hours to get it done. I did it on the stove top and we me stirring the sauce every 15-20 minutes it made me look like I really knew how to cook lol......The aroma in the kitchen was amazing and my family ABSOLUTELY LOVED it!! Thanks so much Jim.

Jim, you are so right about cooking recipes. It's all about individual tastes. Some may like more salt, some less and some garlic, etc. For me, I like to follow someone's recipe exactly the first time then if I think it needs something else, I'll change it up the next time. I am a self trained line cook with twenty-five years experience (hung up my restaurant apron in 2007) and have shared many recipes on social media. I don't get upset or offended if someone says, "that's too much this, or it needs that." I always tell them just like you said to do what you like. The only time a recipe needs to be followed more exactly is in baking. If you don't, you can really come out with a flop. I love your recipes and look forward to the new ones to try. Thank you! PS: I'm in PA and love Sclafani tomatoes. I used to be able to get them at a local store for 89¢ a can but that was a few years ago.

    • @SipandFeast
      @SipandFeast  2 роки тому +1

Thank you for sharing. I totally agree. People need to chill when someone puts in or omits garlic or whatever other ingredients. When I share pizza recipes I post in grams and those are meant to be followed exactly. But for regular cooking, I am trying to encourage people to make the recipes their own and not get hung up on exact details. 89 cents is a steal!

Great to hear. There are some bad things about Long Island, but food definitely isn't one of them. Might I suggest an option to reduce the heat on your browning by adding a tbsp or two of water to lower the heat and pick the brown bits off the bottom before they turn black. Still works fine if you blacken them, but you may notice a flavor change by never letting it burn. Do this throughout the onion phase as well. Just make sure you never let too much brown stuff stick to the bottom. Scrape as you go.

Greetings! Thank you for your videos, catching up since I'm new here and discovered this one. I appreciated what you said: "make it your own" for recipes. I have had to since I can't eat onions, it makes things personalized. Continue the great work, I miss NY food so much being in Colorado these days and watching your videos puts a remembering smile on my face!

Man I really appreciate how specific you are about things aside from saying have fun go crazy. I don't cook for family with alcohol in it. it was awesome you laying down some knowledge about not substituting on this recipe

    • @SipandFeast
      @SipandFeast  2 роки тому

The alcohol can easily be omitted. I try to be specific, but at the same time reassuring that things can be subbed an/or added with more of this or that. Thanks for liking the video!

@@SipandFeast Thanks for the reply! Having to cook without the alcohol makes me regret what that foods missing for authenticity. No one else is the wiser always still great but I end up making myself a regular pot with the wine or sherry and get stuck eating it all myself lol

I'll cook a ragu thike this in a pressure cooker and still make it a one pot dish. The only difference is it is finished in 90 minutes and you barely have to shred the pork. Absolutely the best way to cook a ragu

I honestly can't get enough of your videos :P And I only stumbled across them yesterday!! I live in the UK, I don't have the best budget for food, but I still get a ton of fulfilment watching your videos! I love batch-cooking as well, so your recipes allow me to stick to the main ingredients I tend to get, albeit with the odd differentiation here and there but it opens doors to something entirely new which I can then enjoy for days!

I made the sauce for this on Saturday night and re-heated it Sunday morning to serve to my parents for lunch. My dad went in for seconds, and he's normally too calorie-conscious to do that.
I added a Tbsp of sugar to mine because the tomatoes I grew and canned were very tart. Tasty, but they don't get much sweeter when cooked a long time. I can't get pancetta where I live, but rendering the fat off the top of the pork loin first gave me enough fat to work with. And since I cook for a southern audience, I seasoned my pork loin with an espresso BBQ rub.

So many of your recipes I don't try because they are so close to what we already do. My wife is a Pope - it's a generational thing, but if you don't know the Popes, look up the New Antoinette Pope Cooking School - from roughly the 50s to the 70s they were a premier attraction - a show on WGN TV out of Chicago, a cooking school they ran on Chicago's southside, a classic cook book (we collect them). Anyway, I always see your recipes from this perspective, since she has taught me to be an honorary Italian, learning to cook so similarly to your channel. Anyway, I watched this video and said, Well, I haven't made anything like this before! She was on the road, so I fired up my Dutch oven and made this tonight. Couldn't find the pasta so used rigatoni as you suggested. All I can say is "wow". Needed a little salt and pepper at the end, and I think she would have used more garlic and probably added a good bit of oregano, but that's Italians for you! Loved it. Very hearty, and I'm a huge pork fan. Keep up the great recipes coming!
