- In springtime, we always have more eggs than we can use! I like to put extra eggs up so that we can have plenty of eggs on hand in winter when our birds are not producing as many eggs.

Brine Recipe For Pickled Dilled Eggs:
1.5 cups white vinegar 5% acidity
1 cup water
¾ teaspoon dill weed
¼ teaspoon white pepper
3 teaspoons salt
¼ teaspoon mustard seed
½ teaspoon onion juice or minced onion*
½ teaspoon minced garlic or 1 peeled garlic clove
*I always add more since I like the pickled onions, too!

As a child in the 1960s my uncle was a farm hand. He drove mostly tractors. The farm in which he worked had 1,000 acres. My aunt Elberta (mom's sister) was in her early 30s. The farm used geese to control weeds. A goose will not eat cotton plants. Each year the grandchildren in the family got a colored goose egg from aunt for the center of their Easter baskets. Elberta passed at the young age of 34 after a kidney transplant. I was so happy to hear you talk about goose eggs at this time of year. Thank you!
Geese are really good weed eaters...but definitely wouldn't trust them in the main garden, lol!

I love pickled eggs too! I learned from a West Ladies video years ago. I put hot peppers in mine and enjoy them in salads. I am going to try the dehydrated- have seen Heidi at Rain Country try it too. Blessings to you💕

I freeze my eggs. (Mine are store bought). Never grew up with chickens…. But great idea to dehydrate .

I’m gonna try to dehydrate some eggs this year, I usually freeze them and water glass them
I might have to try dehydrating some eggs this next week. I'm kinda new to dehydrating. I've had a dehydrator for a few years now but just not sure how to use it for things other then bananas. I did dehydrate some mushrooms last year to use in the homemade cream soup mix. They turned out pretty good.
I'd be interested in that pancake mix recipe with the powdered eggs that you mentioned. Let us know how it turns out. Love seeing how you preserve all the blessings that God gives you on the farm!
Dehydrating is newer for us too. Ive had one for a long time, but just haven't really gotten into using regularly until the last year.
I’ve been preserving eggs in the form of egg noodles. I do want to freeze some eggs and have never tried that.

The eggs I froze in the video are raw…you don’t have to pre-whisk them if you don’t want to.
