🍓🫐 Fluffy Summer Cake With Fruits (Strawberries & Blueberries) | Summer dessert | No talking recipe

- Hello! Nice to be back with recipes that brings happiness in my heart. It’s been 2 years since I posted the last video. What a great time to come back ,being summer and enjoy what this season has the best: warmth, fruits, colours. I’m happy to share with you this easy and delicious cake , perfect for summer, made with sweet and refreshing fruits. The ingredients are handy and the fruits can be chosen on everyone’s taste.
INGREDIENTS:
5 large eggs (separated)
100g sugar (about 6 full tablespoons)
120g flour (about 6 full tablespoons)
One small yogurt (mine had 140g)
30ml oil (2 tablespoons)
7g backing powder (one teaspoon)
Pinch of salt
Vanilla extract of your choice
Fruits of your choice
How to prepare:
1. Preheat the oven to 180C.
2. Separate the eggs. Beat egg whites with salt and sugar until stiff peaks form.
3. Add the rest of ingredients: egg yolks, vanilla extract, flour, backing powder, yogurt and the oil. Gently incorporate everything together and do not overmix.
4. Grease a baking dish of your choice with oil and dust with flour. I had a tart dish here but a pound tin or a square baking tin works great too.
5. Transfer the composition into the baking dish and add fruits (frozen or fresh) of your choice on top .
6. Bake in the preheated oven at 180C for 30minutes or until become golden brown on top.
7. Dust the cake with powdered sugar and enjoy!
