    INGREDIENTS
    Soup
    1 1/2 tablespoons (22ml) olive oil
    2 carrots, chopped (about 100g)
    2 celery ribs, chopped (about 80g)
    1/4 sweet onion, chopped (about 50g)
    1 tablespoons (14g) vegan butter
    2 tablespoons (30g) Better Than Bouillion vegetable base
    6 cups (1420ml) warm water
    1/3 cup (40g) all purpose flour
    1 1/2 cups (60g) soy curls
    1/4 cup (10g) fresh parsley, chopped
    Salt and pepper, to taste
    Dumplings
    2 cups (240g) all purpose flour
    1 tablespoon (14g) baking powder
    1/8 teaspoon salt
    3/4 cup (180ml) non-dairy milk, unsweetened and unflavored
    2 tablespoons (28g) vegan butter, melted

    I substitute mushrooms instead of adding the soycurles and I call it veggie dumplings. I do the same with my cottage veggie pie recipe 😋

    I agree with your BF. The more dumplings the better. I make mine with a cashew cream instead of making a roux and always add extra dumplings. Sometimes adding the dumplings thickens it up too.

    Love soy curls and love dumpling soups! My family makes a traditional Haitian soup with dumplings but they’re very dense. I love any version of dumplings so I’m excited to try this! I’m also in full support of boyfriend version #alllllldumplings 😂 heck yeah

    Making this! The only thing I'm going to add is a tiny bit of cornstarch. Cornstarch can thicken liquids and also coat seasonings onto veggies. I use to have trouble in the past with veggie dishes that involve broth where the seasoning gets lost in broth and doesn't stick to veggies (then causes the veggies to taste bland) until I learned the cornstarch hack.

    Soy curls are available at many Asian grocery stores! I love them and use them often. This recipe looks delicious I’m going to have to try!

    I am making this now because I had a hankering for some chicken & dumplings but I have no chicken 😕. I added some diced potatoes & frozen peas to mine. I also made some dumplings a while back that I froze so I just pulled those out & added, so good 😋!!

    I love making chik'n & dumplings! Such a great fall/winter (mostly 😂) one pot meal. I can't wait to try your version!

      Though I can't believe I haven't made the version in your cookbook yet! I'll have to try that one, too. Also your boyfriend sounds similar to my husband. He wants alllll the dumplings 😂

    For gluten sensitive people, look into Einkorn wheat. It is an ancient wheat non-hybrid with a much lower gluten content than our modern hybridized wheat. I bake and cook with it and it does not bother my autoimmune disease. 😊

    A wonderful, hearty recipe for colder weather, and I'm debating doing it per your boyfriend's preferences, because carby carbs are the best! But I do love carrots and celery stewed in a flavorful broth, on the other hand, so maybe I'll put Daring chicken on the shopping list . . . Thanks for posting : )

      @@PlantifullyBased I've never had success with dumplings, they are always gooey in the center. But you've inspired me, maybe keeping them small is key. (?)

    Hello this recipe looks so delicious! I was wondering what type of parsley you are using? There are so many different types of parsley with different flavors. I just want to make sure I am using the right one. Thank you so much!

      Thank you! I’m using Italian but any kind will do whatever you like or have accessible! Can even just use dry parsley if it makes it easier :)

    I’ve never used soy curls before. Does this dish taste like chicken n dumplings?

      my non-vegan boyfriend loves it, so i would say yes! i actually never had chicken and dumplings prior to going vegan. soy curls are very easy to use just have to put them in the pot
