CHICHARRON EN SALSA ROJA is a delicious Mexican dish made of pork Crackling in a red tomato salsa of onions, garlic, peppers and other herbs and spices of your choice, it can be enjoyed anytime of the day, i especially love it for breakfast. CHICHARRON becomes tender when left to simmer in the salsa for atleast 20 minutes, then served with traditional refried beans and eggs or other side of your choice. CHICHARRON EN SALSA ROJA can also be enjoyed in gorditas, sopes or in flour or corn tortillas as delicious tacos.
INGREDIENTS
3-4 Tbsp vegetable oil
1/4 medium onion (chopped)
3 green chopped onions (white and green)
2 large garlic cloves (minced)
4 medium Roma tomatoes
3 serrano peppers sliced (optional)
3/4 Tbsp Tomato bouillon chicken flavored
3 & 1/2 C. water (as needed)
1/4 Lb. (0.25) CHICHARRON
SIDES
refried beans
2 fried eggs
flour tortillas

I just happened to be passing through with comments my friend, I get thousands spread throughout all my videos and I wish I could respond to all because I love what i do, but I just can't keep up...I love texture, and in this dish I wanted it to be chunky, I love using the blender, roasting and the molcajete when making salsas, they all have a time, but not always necessary. Follow the recipe carefully, and they will be delicious for you my friend. I may not see or hear from you again, but know that I will think of you. Blessings my friend. ❤️

Hi Rachel, Thnx for all the original Mexican recipes. My Bob and I love Mexican food. I cook mostly American and German dishes, so to get a good Mexican recipe is priceless for me. Have enjoyed the seasoning recipes and enchilada recipes along w/the sauce recipes. Haven’t made a lot yet as I haven’t been watching you all that long, anyway, thnx so much for all of your meals. Love chicharrones and usually now order them as a breakfast plate or taco since Johnny won't eat it. But now I'm thinking I could whip this up and share it with his sister who does eat meat. *Delicious!* Very close to my recipe,try adding a chilie smashed in from a can of salsa de adobo with chipotle...and a tablespoon of the cans loose sauce...it's a game changer!*

I think it is very rude to eat in front of us! 😊 . Everytime you take a bite of your delicious food my mouth starts to water . I have made a couple of your recipes so far. They were so very very good. I really enjoy watching you. You explain everything so well. I am not Hispanic so many of those foods I have never heard of or tasted. I made this for breakfast exactly following your method for my brother and me. He said all he had to do was close his eyes and feel like he was sitting and eating in Mexico City, lol. It was delicious and I am so grateful for your channel Rachel! I've made a few of your dishes, the more recent one Chicken and Rajas con queso. Made it for my Tia and cousins and they loved it. I remember my ex MIL making these a time or two (may she rest in peace) I never got to try them but watching you make these made me think of her and now I'm sad. 😔 She meant the world to my babies! Ms. Rachel, I made the CHICHARRON for my husband and also your refried beans everything turned out delicious my husband said they were better than he ever tasted. Next is the chilacilas.
