I made this as soon as I watched the video. I did not realize my new oven is so much better than the old one, so it overcooked at 30 minutes. The bread was drier than it should have been, so I soaked slices in beaten eggs with a touch of heavy cream and cinnamon to make French toast. I then topped it with sugar-free, low carb, maple syrup and for others, sugar-free, low carb, chocolate syrup. Both received rave reviews from family and friends.
This looks and sounds delicious but has anyone ever tried to bake these as muffins? I am the only keto person in my house and portion control with loaf breads can be a challenge. Thx!
Yes you can make this into muffins. Just spoon about 3 1/2 TBS of the batter into greased muffin cups and bake for 15 to 20 minutes until tester comes out clean
Wow, my son loves peanut butter so I want to try this. I can't believe it would work with no keto flour. I'm going to try 1 tbsp. of brown sugar and 1/2 cup of chocolate chips. Hope it works. Jeremiah likes a sweeter bread. And yes he demands I use regular non keto sugar so I look for recipes that have lower amounts of sugar and since I'm keto, he is my taste tester. You don’t need added oils! Peanuts are oily by themselves, and the seed oils added to some commercial peanut butters are very unhealthy.

Do you need to use Apple cider vinegar? Can you substitute with a different vinegar?
You can use white vinegar instead of apple cider vinegar
